Central Deli Commissary Manager Job Summary:
We are seeking an experienced and detail-oriented Central Deli Commissary Manager to oversee the efficient operation of our central commissary facility. This role is pivotal in ensuring the production, preparation, and distribution of high-quality deli products to multiple retail locations. The ideal candidate will have a strong background in food production management, with a focus on operational efficiency, team leadership, and compliance with industry standards. This position reports to the Perishable Director and involves managing a team in a fast-paced, food manufacturing environment.
Key Responsibilities Oversee Food Safety Protocols:
Implement and enforce strict food safety standards, including HACCP (Hazard Analysis and Critical Control Points) compliance, sanitation procedures, allergen management, and regular audits to prevent contamination and ensure product integrity.
Manage Production Schedules:
Develop, monitor, and adjust daily and weekly production schedules to meet demand forecasts, optimize workflow, and minimize downtime while coordinating with retail outlets for timely deliveries.
Handle Ordering Inventory:
Forecast inventory needs based on production demands, place orders with suppliers, and maintain accurate stock levels to avoid shortages or overstocking, while negotiating favorable terms for cost savings.
Coordinate Employee Scheduling:
Create and manage staff schedules to ensure adequate coverage for all shifts, handle shift rotations, and address staffing needs during peak periods or absences.
Perform Costing Analysis:
Calculate and monitor product costs, including raw materials, labor, and overhead; analyze variances, implement cost-control measures, and generate reports to support budgeting and pricing decisions.
Manage Supply Orders:
Source, order, and track supplies such as packaging.
Lead Daily Operations:
Supervise the preparation, portioning, and packaging of deli items like sandwiches, salads, meats, and cheeses, ensuring consistency in quality and portion control.
Team Leadership and Training:
Recruit, train, and mentor commissary staff on best practices, safety procedures, and operational protocols; conduct performance evaluations and foster a positive work environment.
Quality Control and Assurance:
Conduct regular inspections of products and processes to maintain high standards; address any quality issues promptly and implement continuous improvement initiatives.
Compliance and Reporting:
Ensure adherence to local, state, and federal regulations, including FDA and USDA guidelines; prepare and submit required reports on production metrics, inventory, and safety incidents.
Collaboration and Distribution:
Coordinate with retail store managers and logistics teams to plan product distribution, manage delivery schedules, and respond to feedback on product needs or issues. Required Qualifications Minimum of 5 years of experience in food production, commissary operations, or a similar role in the food service industry. Certification in food safety (e.g., SERV Safe Manager or equivalent) is required. Strong knowledge of deli products, preparation techniques, and industry trends. Skills and Abilities Excellent organizational and multitasking skills with the ability to prioritize in a dynamic environment. Strong leadership and communication abilities to motivate teams and collaborate across departments. Proficiency in Microsoft Office Suite (Excel for costing and scheduling) and inventory management software. Analytical mindset for problem-solving, cost analysis, and process optimization. Physical stamina to work in a commissary setting, including standing for extended periods and lifting to 50 lbs. Commitment to maintaining a safe, clean, and efficient workplace. Working Conditions Full-time position with potential for evening, weekend, or holiday shifts based on production needs. Work environment includes exposure to cold storage areas, kitchen equipment, and food allergens.
