Sous Chef / Kitchen Manager — Experience RequiredThe Tides Estate | North Haledon, New Jersey The Tides Estate is seeking an experienced, organized, and hands-on Sous Chef / Kitchen Manager to join our culinary team. This leadership position is responsible for overseeing daily kitchen operations, supporting menu execution, and maintaining high standards of food quality, presentation, cleanliness, and efficiency for weddings, private celebrations, and special events. The ideal candidate combines strong culinary skills with proven kitchen management experience. We are looking for a dependable professional who leads by example, communicates effectively, and maintains consistency while managing the demands of high-volume event service. Previous experience as a sous chef, kitchen manager, or in a comparable culinary leadership position is required. Position Overview Working closely with culinary leadership and the management team, the Sous Chef / Kitchen Manager coordinates food preparation, supervises kitchen staff, and ensures that each event is executed according to its menu, timeline, and guest requirements. This is an active, working position that requires involvement in production and service, as well as responsibility for kitchen organization, staffing, inventory, and cost control. Key Responsibilities Lead daily kitchen operations. Organize prep schedules, assign stations and responsibilities, and ensure the kitchen is prepared for upcoming events. Review banquet event orders, guest counts, menus, and special requests with the appropriate team members. Execute consistent, high-quality food. Participate in preparation, cooking, plating, and service while maintaining established recipes, portion sizes, presentation standards, and quality expectations. Supervise and develop kitchen staff. Train and guide cooks, prep staff, and dishwashers. Assist with scheduling, monitor productivity, and hold team members accountable for professionalism, cleanliness, and performance. Coordinate event service. Work closely with the maître d', banquet captains, and management to align kitchen production with event timelines. Monitor course readiness and communicate promptly about changes or service concerns. Manage inventory and control waste. Monitor stock levels, assist with purchasing, inspect deliveries, and maintain organized storage and proper product rotation. Support food and labor cost goals without compromising quality. Maintain food safety and kitchen readiness. Oversee sanitation, labeling, storage, temperature monitoring, and opening and closing procedures. Communicate and manage allergy-related requests carefully, report equipment issues, and ensure work areas remain clean and organized. Required Qualifications Previous experience as a sous chef, kitchen manager, or comparable culinary supervisor is required. Experience in a high-volume catering venue, banquet facility, hotel, or upscale restaurant is strongly preferred. Strong cooking fundamentals and demonstrated ability to coordinate large-scale preparation, multiple stations, and timed service. Proven leadership, organization, and communication skills, with the ability to train staff, delegate effectively, and remain composed under pressure. Practical experience with inventory, ordering, portion control, waste reduction, and food safety procedures. Relevant food safety certification is preferred. Availability for evenings, weekends, holidays, and event-driven schedules, with the ability to perform essential kitchen duties—including prolonged standing, working in a hot environment, and lifting supplies—with or without reasonable accommodation.
