Job Description

Winston Hospitality is seeking an accomplished, energetic, and hospitality-driven Restaurant General Manager to lead the opening and ongoing operation of FYR Prime, a brand-new fine dining steakhouse located within Ho-Chunk Gaming Beloit, a major new casino and hotel destination in Beloit, Wisconsin. This is an exceptional opportunity for an experienced fine dining leader who wants to build something from the ground up. As the opening General Manager, you will play a critical role in establishing FYR Prime's culture, service standards, operating systems, team, and reputation, both within the Beloit community and among Ho-Chunk Gaming Beloit's guest base. FYR Prime is a fine dining, high-check-average steakhouse concept built around a serious wine and beverage program and a refined, attentive service standard. We are looking for a leader with real fine dining experience, not general restaurant management experience alone, who understands what it takes to deliver that level of hospitality consistently, night after night. Because FYR Prime operates within Ho-Chunk Gaming Beloit, the ideal candidate will also be comfortable navigating VIP guest handling, players club and comp structures, and coordination with casino marketing and operations. Prior experience in a casino or gaming-adjacent hospitality environment is a strong plus. Key Responsibilities
  • Lead the restaurant's pre-opening process in partnership with Winston Hospitality leadership.
  • Interview, hire, onboard, and train the restaurant team.
  • Establish a strong fine dining service and hospitality culture.
  • Develop and implement operating procedures, service standards, and opening/closing procedures.
  • Participate in menu tastings, operational testing, staff training, and mock services.
  • Coordinate with the culinary team to ensure seamless front-of-house and back-of-house operations.
  • Help develop local relationships and generate awareness leading up to the opening.
  • Ensure the restaurant is fully prepared for a successful opening and long-term operation.
  • Lead all day-to-day restaurant operations.
  • Maintain a visible and engaged leadership presence during service.
  • Establish and maintain high standards for hospitality, cleanliness, safety, and operational execution.
  • Ensure compliance with all company policies and applicable health, safety, and employment regulations.
  • Monitor guest feedback and take appropriate action to resolve concerns and improve the overall experience.
  • Partner closely with the Executive Chef to maintain consistency, quality, efficiency, and teamwork.
  • Take ownership of the restaurant's financial performance and operating results.
  • Manage labor, food, beverage, and operating expenses effectively.
  • Develop and execute strategies to increase sales and profitability.
  • Maintain appropriate inventory controls and minimize waste.
  • Ensure proper cash-handling and financial-control procedures.
  • Partner with Winston Hospitality leadership on budgets, forecasts, business plans, and performance goals.
  • Navigate casino-specific guest service protocols, including VIP handling and comp procedures, in coordination with casino operations and marketing. What We're Looking For
  • Proven experience as a General Manager or senior front-of-house leader in a fine dining restaurant, ideally with a high check average and a full-service wine or beverage program.
  • Experience opening a restaurant from the ground up is strongly preferred.
  • Experience in a casino, resort, or other gaming-adjacent hospitality environment is a strong plus.
  • A genuine passion for hospitality, paired with the business discipline to translate a great guest experience into strong financial performance. Compensation & Benefits
