About This Position The Lead Food Service Worker performs a variety of kitchen duties as assigned and/or instructs inmate labor in preparation and serving of correctional facility meals in accordance with departmental work production standards, standardized recipes, and work instructions. Essential Functions, Duties, and Responsibilities Provide leadership and coordination of daily food service operations, under the director of the Food Service Director, while actively participating in meal preparation and service as needed.
Oversee and assist Food Service Supervisors and workers in daily activities, ensuring proper task execution, operational efficiency, and compliance with standards.
Lead and participate in pre shift, post shift, and meal briefings with staff to communicate expectations, review performance, address issues, and ensure alignment with operational goals.
Ensure and support staff in preparing, cooking, and serving food according to menus, standardized recipes, and work instructions.
Provide ongoing direction, coaching, and hands-on support to supervisors and staff to maintain productivity, accountability, and quality standards.
Monitor, verify, and assist with adherence to standardized recipes, therapeutic diets, and special meal requirements to ensure accuracy and compliance.
Oversee and assist in meal service operations to ensure proper portions, meal counts, timing, and compliance with scheduled service requirements.
Oversee and participate in receiving food and supplies, verifying deliveries for accuracy, quality, and condition, and ensuring proper documentation.
Ensure and support proper storage of food and supplies using FIFO practices, labeling, temperature controls, and food safety standards.
Monitor and maintain storage areas, including refrigerators, freezers, dry storage, and secured/locked storage areas, ensuring compliance with access control and departmental policies.
Ensure all tools, equipment, and restricted items are properly issued, tracked, accounted for, and secured, while actively verifying compliance during operations.
Enforce and support compliance with all food safety, sanitation, and hygiene regulations, correcting deficiencies and assisting staff in proper practices.
Inspect and assist in maintaining clean, organized, and sanitary work areas, including equipment and facility spaces.
Review, complete, and verify required documentation including meal counts, special diet tracking, temperature logs, tool logs, and production records.
Ensure and reinforce compliance with all facility safety rules, security procedures, and company policies across all staff.
Maintain order, control, and security within the operation while actively supporting a safe, efficient, and compliant work environment.
Directly assist with food preparation, service, cleaning, and other operational duties as needed to support staffing and workload demands.
Perform other related duties as assigned.
Meet the physical demands of the position, including standing, walking, bending, lifting, and manual tasks as required. What You'll Need High School Diploma or GED and/or equivalent experience. Must be at least 18 years of age. Prior institutional food service or restaurant experience is a plus.
Ability to lift up to 50 lbs.
