Position Highlights As the Food Services Supervisor 1, you will be responsible for: Supervising and training the offender staff; Planning and implementing kitchen functions; Food preparation and serving; Practicing food safety and sanitation; Maintaining a clean and sanitary standardized workplace; Assisting with food inventory, including ordering, shipping, receiving, storage, and rotation(FIFO). You will have direct contact with inmates of all security levels, both as workers and within your assigned facility. You will be responsible for supervising inmates in the preparation and serving of meals. After two years of successful service as a Correctional Food Services Supervisor 1, the incumbent will be promoted to the position of Correctional Food Services Supervisor 2. This is a full-time position, 36.25 hours per week. The schedule is a 5-day work week with rotating weekend and holiday shifts. Important Information About This Recruitment:

The selected candidate will need to complete 14 weeks of training at our Training Academy in Cheshire, CT. This training consists of both classroom and on-the-job training. There are physical elements to the training: Behavior Management Program - training in the use of physical force assist applies to self-defense, and the maintenance of order and security within the inmate population. It consists of one day of classroom presentation and nine days of "hands-on" physical training. To graduate, trainees will be required to pass a written exam, as well as a practical skills test, which will be scored. All Food Service professionals will be provided with uniforms and footwear.

PURPOSE OF JOB CLASS

(NATURE OF WORK) In a Department of Correction facility or district this class is accountable for the preparation, retherming and service of daily meals.

EXAMPLES OF DUTIES

Supervises inmates and assists in preparation, retherming and serving of food in a correctional facility or district; Oversees cleaning, sanitation and maintenance of kitchen area and equipment; Instructs and trains inmates in light food preparation, retherming and serving; Assists with storage, rotation and security of food; Keeps records and makes reports; Assists with requisition of food and kitchen supplies; Maintains discipline and security measures; May assist in food preparation, cooking and serving; May conduct security checks and tours; May physically restrain inmates, quell disturbances and otherwise assist custodial forces in emergencies; Performs related duties as required.

KNOWLEDGE, SKILL AND ABILITY

Knowledge of current materials and equipment used in large scale food preparation and service; kettle preparation, oven and grill work; principles, methods and practices of food preparation and service; safety and sanitation problems related to large scale food service operations; Considerable interpersonal skills; oral and written communication skills; Ability to instruct inmates; keep records and make reports; read and write recipes; perform under stress; utilize computer software; Supervisory ability.

MINIMUM QUALIFICATIONS - GENERAL EXPERIENCE

Two (2) years of experience in the preparation and serving of complete daily meals in a large scale (500 meals per day) institutional or commercial setting such as a hospital, residential school, extended care facility, rest home, full service restaurant, military mess, large catering business or other similar environment.

NOTE:

Experience in fast food operations does not qualify.

MINIMUM QUALIFICATIONS - SUBSTITUTIONS ALLOWED

College training in dietetics, hotel, restaurant and/or food service, nutrition or a related field may be substituted for the General Experience on the basis of fifteen (15) semester hours equaling one-half (1/2) year of experience to a maximum of one (1) year.

PREFERRED QUALIFICATIONS

Experience in producing large volumes, 500 meals per day. This includes receiving foods, food inventory, food ordering, food storage and rotation (FIFO), food safety and sanitation. Experience supervising food services employees in a large-scale institutional or commercial setting (Hospital, Residential School, Extended Care Facility, Rest Home, Full-service Restaurant, Military Mess, or Large Catering Business). Experience handling disagreements and stressful situations while maintaining a high level or professionalism. Experience in managing or training employees. Experience with Hazard Analysis and Critical Control Points (HACCP). Experience in planning and implementing day-to-day work assignments for staff. Serv Safe Certified.

SPECIAL REQUIREMENTS

Incumbents in this class may be required to possess a high school diploma or General Educational Development (GED) certification at the time of appointment. Incumbents in this class may be required to successfully complete a formal training course in correctional work to develop the knowledge, skills and abilities to successfully perform the duties of the class.

CHARACTER REQUIREMENTS

In addition to the checking of references and of facts stated in the application, a thorough background investigation of each candidate may be made before persons are certified for appointment.

PHYSICAL REQUIREMENTS

Incumbents in this class must have general good health, be free from any disease or injury which would impair health or usefulness and possess and retain sufficient physical strength, stamina, agility, endurance and visual and auditory acuity required to perform all the duties of the class. A comprehensive medical examination, including a controlled substance screening, will be required of all applicants upon a conditional offer of employment.

WORKING CONDITIONS
