Job Description

Summary Responsible for the overall management of all food service for residents, employees and guests under sanitary conditions as required by The Timbers of Blackwell Creek policies and state licensure and health regulations. Assist in maintaining a positive physical and social environment for the residents.
Basic Qualifications and Performance Requirements Basic Qualifications:
Two years of culinary and managerial experience preferred. Serve Safe certification is required. Knowledge of local and state sanitation guidelines required. Knowledge of large-scale production of food and meal service techniques. Knowledge of the principles of nutrition and therapeutic diets. Must be able to handle conflict, problems and emergency situations. Must be able to express self adequately in written and oral communication and to communicate effectively in an interdisciplinary setting with residents, families, staff members, representatives of community and government agencies. Computer skills such as Excel and Word documents required. High energy level and the ability to handle multiple priorities is required. Ability to plan, organize, develop and manage the objectives of dining services to provide a quality meal experience for residents, guest and staff.
Performance Requirements:

Promotes and protects residents' rights and treats residents with dignity and respect. Attends in-services and education programs and obtains continuing education required for certification. Demonstrates the ability to remain calm under stressful conditions. Maintains confidentiality of resident information in compliance with HIPAA guidelines. Maintains professional appearance by adherence to community dress code. Work schedules and assigned tasks are completed in accordance to the established policies and procedures of the community. Safety precautions and practices are utilized with all activities. Ensures compliance with OSHA and fire safety guidelines and regulations. Ensures compliance with Infection Control policy and procedures.
Essential Functions and ResponsibilitiesFunctions and Responsibilities:
Demonstrates positive customer service relations and community's quality care and serve standards. Manage the food service department in an efficient manner while following on of the budgetary guidelines. Conduct monthly Food Committee meetings and review resident comment cards/feedback to improve quality and operational efficiency. Organize special events, parties and banquets; coordinate as necessary with other departments. Consults with Registered Dietician on issues involving special diets or modifications to the menu. Maintains visibility during meal service to ensure quality of food and service. Responsible for ordering all necessary food items and supplies in accordance to budgetary guidelines. Responsible for the orderly operation of the meal delivery. Responsible for ensuring that food is properly labeled, stored and prepared in accordance to all state and local health standards. Responsible for ensuring the cleanliness of the kitchen and dining room in accordance to all sanitation standards. Responsible for the hiring and training of all food service personnel. Conducts monthly in-services on safety and sanitation for food service staff. Ensures compliance with all regulatory agencies by continually monitoring the operation of the department and making changes as needed. Other duties as assigned by the Executive Director.
Safety and Sanitation:
Understand and follow safety and infection control policies and procedures. Follow established procedures in the use and disposal of personal protective equipment. Practice and encourage regular thorough hand-washing. Clean, wipe and sanitize surfaces and objects (e.g. door knobs, appliances, countertops) with disinfectant using approved methods and cleaning agents often each shift. Oversees the proper inventory, storage and use of cleaning chemicals. Keeps waste to a minimum by utilizing food storage and food recycling techniques. Participate in Manager on Duty program. Performs all duties in adherence to The Timbers of Blackwell Creek. Strives to maintain a safe working environment through the prevention of accidents, the preservation of equipment, and the achievement of safe working practices. Maintains a positive and professional demeanor toward all residents, visitors and co-workers. Adheres to all policies and procedures of The Timbers on Blackwell Creek. Performs other duties as assigned.
Training:
Attends in-service and education programs and attends continuing education required for professional certification or licensure. Develop and maintain professional affiliations. Working Conditions/Physical Requirements The Executive Chef works as scheduled by his/her supervisor which may include nights, weekends and holidays. The stress level is moderate due to the amount of resident interaction and physical requirements. The work environment involves exposure to internal (climate controlled) as well as exposure to high temperatures during meal preparation. Vocal and written communication is required, as well as hearing for effective communication. The Executive Chef must be able to move quickly and efficiently around the community and meet all safety rules and regulations related to the job. Stooping, bending, turning, reaching, grasping, stretching, pushing, pulling and lifting are necessary for performing the job successfully. The physical demands and work environment described here are representative of those that must be met by an employee to successfully perform the responsibilities of this job. English Qualifications Education:
High School Diploma or equivalent
Experience:
1-2 years of related food service experience in a senior living facility, hospital, school cafeteria, or similar institutional or community-based setting strongly preferred.
