Job Description
Food & Beverage Supervisor — Breakfast/Buffet (Military Installation) Position summary Lead daily breakfast and buffet operations to deliver consistent, high-quality food and beverage service that meets hotel brand standards and state/local Health Board regulations. Supervise staff, monitor food safety and presentation, control costs and inventory, maintain cleanliness and equipment, and ensure excellent guest service. This position requires access to a military installation; employment is contingent on passing a Federal background check. Essential duties and responsibilities Oversee setup, replenishment, and breakdown of food and beverage buffet areas to ensure consistent quality, presentation, portion control, and temperature standards. Prepare and/or transport food, supplies, equipment and materials between kitchen, storage, and breakfast room as needed. Monitor supplies (food, trays, plates, utensils, napkins, condiments) and replenish proactively to serve guests without interruption. Ensure food is prepared and presented according to recipes, quality standards, and service times; monitor taste, appearance, texture, and portion sizes. Greet guests, respond to requests professionally, and escalate serious issues to management. Monitor and control food & beverage costs; follow procedures for secure storage, inventory accuracy, and waste minimization. Maintain a clean, organized breakfast and service area (steam tables, counters, sneeze guards, refrigerators, ovens, sinks, floors, walls, trash). Inspect equipment for safe/operational condition; report maintenance or safety hazards promptly. Operate dishwashing equipment per manufacturer instructions and store clean items appropriately. Promote teamwork with other departments through daily communication and coordination. Train, mentor, schedule, and supervise buffet staff; perform performance monitoring and feedback. Perform other duties as assigned. Qualifications and requirements Must be able to pass a Federal Background Check to access the military installation — employment contingent upon clearance. Basic reading, writing, and math skills required; prior food preparation or supervisory experience preferred. Must have or obtain ServSafe certification (specify: Food Handler or Manager level per hotel requirement) prior to or shortly after hire. Ability to lift/carry up to 50 pounds regularly. Ability to stand and move about kitchen, storage, and breakfast room for entire shift; bending, stooping, kneeling required. Strong verbal communication skills for guest and team interactions. Comfortable using measurements, counts, basic math for recipes, production, and inventory tracking.
