Job Description

Potter Ridge Assisted Living is hiring for a Food Service Director (FSD). The FSD provides proactive leadership, overall direction and operational management of our culinary services team. The FSD is responsible for all areas of financial accountability, and labor guidelines. He/she will ensure fulfillment of our commitment to provide residents with excellence in quality and an upscale senior living environment unequaled in the industry. Other duties include, but are not limited to; Participates in catering special events in and outside of the community. Order food and oversee kitchen cleanliness. Prepare dining menu. Provides creativity not only to the menu items and recipes but to the presentation of food. Has a good knowledge of nutrition, recipes and special dietary needs, e.g. what to substitute for residents on special diets or what a bread exchange is. Demonstrates good emergency decision making e.g., food that was ordered for a meal and was never delivered. Properly operates all the equipment in the kitchen. Demonstrates good judgments and makes well thought out recommendations regarding inventory. Willing to help with special events, fill in for others to accommodate emergency situations. Assures that each person on a special diet is accommodated. Demonstrates a strong respect for facility property and supplies; takes action to protect equipment and eliminate waste. Maintains a cheerful and cooperative relationship with coworkers. Smoothly integrates proper safety sanitation techniques as part of the work, e.g. washes hands, wears proper equipment for safety, uses cleaning products properly. Responsible for labeling, dating and rotating stock. Prepares menus for upcoming week, ensuring that supplies are available. Prepares food ahead of time for weekend meals and evening meal. Leaves explicit direction for unlicensed staff if they are responsible for serving meal. Orders food/paper products/cleaning supplies. Abides by Food and Beverage License.
Knowledge, Skills, Qualifications:
Executive chef/kitchen manager experience preferred or 2‐3 years experience as a culinary manager Knowledge in all areas of menu planning, food preparation, and production Knowledge in all areas of local health department, OSHA, and other regulatory agencies Knowledge of management finance Knowledge of computers and software applications including
Word and Excel Marginal Functions:
Ability to learn and assist in other areas of the facility. Report resident changes to the staff on duty. Documents as required. Ability to see when tasks need to be accomplished and takes the initiative to do the tasks. Offers suggestions and ideas for improvement.
Education and Experience:
High School education. Some experience preferred.
