The State of New Hampshire, Department of Corrections, Division of Administration, Facility Logistical Services has a full-time vacancy for Kitchen Supervisor I.
Summary:
Supervises subordinate employees and inmate workers in a large correctional kitchen and provides training and education programming in all aspect of food service at the New Hampshire State Prison for Men (NHSPM); while working in close and immediate contact with prisoners on a daily basis, having responsibility for security. This position may be required to provide assistance at the New Hampshire Correctional Facility for Women's kitchen on an as-needed basis.

MINIMUM QUALIFICATIONS
Education/Experience:
Equivalent combination of 4 years of education and experience after completion of high school. Education and experience must be in culinary arts, large-quantity cookery, food services, restaurant management, or a related field.
License/Certification:
Valid driver's license or have access to transportation for statewide travel.
Other Requirements:
Pass security and background screenings required for correctional environments.
Trainee Option:
Candidates with an equivalent combination of 3+ years of relevant education and experience after completion of high school may be considered and hired in 'trainee status' for this position.
PREFERRED QUALIFICATIONS
Possession of ServSafe Food Protection Manager.
AFTER-HIRE REQUIREMENTS
1. Successful completion of the Corrections Academy within 12 months of hire and continuing certification as correctional line personnel as established by the certifying authority. 2. Must successfully complete the ServSafe Food Protection Manager Program within 12 months and maintain throughout employment.

(AGENCY/POSITION-SPECIFIC): Supervises staff and inmate workers in all aspects of meal preparation and serving in an institutional setting ensuring State of New Hampshire Health and Safety Codes are followed. Ensures daily inventory of tools (knives, box cutters, scissors, and other kitchen utensils) that are used by inmate workers is performed on a daily basis. Assigns work to Chefs and inmate workers, including training and program expectations, evaluates employee work performance and makes recommendations for improvements and incremental salary increases as appropriate. Reviews and evaluates foods and supplies for quality and quantity, to be received into the kitchen stock room for meal preparation and inventory processing. Inspects all food service operations for the facility ensuring health, safety and sanitary code compliance is met. Supervises and coordinates preparation of food for special diets for distribution to various units, inmates, and patients. Complies with and enforces all security policies and procedures in the operation of a large correctional kitchen, investigates problems and complaints and implements solutions as appropriate. Oversees and maintains the facility's food and kitchen supply budget working within the State's budgetary guidelines and provides reports to Supervisor to ensure inventory and supplies of goods are maintained for the institution.
