In this role, you will oversee the preparation and cooking of a variety of smoked dishes, ensuring quality, consistency, and exceptional guest satisfaction. Your expertise in managing kitchen operations, supervising staff, and maintaining safety standards will be vital to delivering a memorable culinary experience. This position offers an exciting opportunity to showcase your mastery of traditional smoking techniques while leading a dedicated team in a fast-paced environment. Responsibilities Lead the daily operations of the smokehouse, including overseeing the preparation, seasoning, and smoking of meats and other menu items. Supervise and mentor kitchen staff, ensuring adherence to recipes, quality standards, and safety protocols. Manage inventory levels for smoking woods, spices, meats, and other ingredients; coordinate with suppliers as needed. Maintain strict compliance with health and safety regulations related to food handling, storage, and sanitation practices. Ensure timely service delivery by coordinating with front-of-house staff to meet guest expectations. Utilize technical proficiency with smokehouse equipment and casino management systems to monitor operations efficiently. Provide excellent guest service by engaging with customers about menu offerings and addressing any concerns promptly. Experience Proven experience in a culinary or smokehouse environment with supervisory responsibilities. Demonstrated leadership skills and the importance of punctuality. Strong technical proficiency with kitchen equipment, including smokers and temperature control devices; basic math and numeracy skills essential for precise measurements and inventory management. Excellent customer service skills with the ability to handle conflicts professionally and ensure guest satisfaction.
