Job Description

The Culinary Director will lead the quality, consistency, and financial performance for all restaurant and banquet culinary operations which includes multiple restaurant outlets and concepts focusing on menu innovation, guest satisfaction, operational efficiency, and cost control. Salary range is based on skills and experience. This full-time position features excellent employer-paid medical, dental, vision and life insurance benefits. Minimum Qualifications
REQUIRED
High School Diploma or GED equivalent Culinary Arts Degree/Certification Fifteen years of high volume, casino/resort, Executive Chef experience Ten years of leadership experience
PREFERRED
Gaming experience Experience working with tribal entities Additional education/experience may substitute for the minimum requirements of the position.

ESSENTIAL FUNCTIONS
Provides strategic direction, development, and performance management of kitchen team members. Implements and maintains cost controls to ensure kitchen operations stay within budget parameters, conducting portion checks to ensure established standards are met. Leads seasonal menu development that focuses on fresh locally inspired cuisine. Performs the duties of all other cooking positions to ensure the appropriate standards of behavior, work, and productivity are maintained. Provides leadership with recommendations on efficiency improvements in kitchen operations. Procures all food products and kitchen supplies, completing accurate and regular inventory. Establishes and maintains security of all products, supplies, and equipment. Maintains kitchen safety and sanitation standards, ensures walk-ins and storage areas clean and organized. Develop and communicate department policies, procedures, and standards ensuring team members are trained, in compliance and providing superior guest service. Conducts regular team meetings to ensure uniform enforcement of policies and procedures and the execution of department-wide objectives. Complete team schedules ensuring necessary coverage and maximum efficiency. Manage payroll processing for team, ensuring accuracy and timeliness. Protects the confidentiality of any and all Casino business information. Performs other duties as assigned.

Confidentiality Additional Requirements:
Must be able to work all scheduled shifts to include day, swing, graveyard and holidays All applicants must obtain a Class III A license as required by the Puyallup Tribal Gaming Regulatory Office and the Washington State Gaming Commission. Pre-employment drug testing is required for all positions. However, the use of marijuana will not disqualify an applicant unless the position requires driving a company vehicle.
