Job Description

Kitchen Manager Production & Food Trailer (No Late Nights) (Driftwood | True Bird Farm / True Bird Kitchen)Good meals start with good chicken.

True Bird Farm is a pasture-raised chicken farm in Driftwood, and we re hiring a Kitchen Manager to oversee our value-added production program and support operations for our food trailer, True Bird Kitchen.

This is a great role if you like running a tight, organized kitchen without giant menus, late nights, or chaos
  • Pay & Schedule
  • $60,000 $65,000 salary
  • ~40 45 hours/week
  • Mix of production days + trailer service
  • Consistent schedule, no late nights Typical Week
  • Production days (prep, sausage, marinated items): daytime, done by ~5 6 PM
  • Service days (food trailer): done by ~9:30 10 PM latest
  • Small team, structured workflow
  • The Job
  • Run day-to-day production of value-added items:
  • Marinated chicken, sausage, chicken salad
  • Expanding into stock and schmaltz
  • Work from prep lists, batch schedules, and inventory systems
  • Keep production organized, consistent, and on track
  • Support food trailer prep and work some service shifts
  • Lead a small team (1 2 people) and keep things running smoothly The majority of this role is production, consistency, and execution
  • Creative Input (Part of the Role
  • Refine marinades and products over time
  • Contribute seasonal items or specials
  • Help improve sausage and value-added offerings Creativity is welcome but always comes after consistency and execution

  • Organized and detail-oriented
  • Comfortable managing prep, production, and a small team
  • Ready to take on a first management role or grow in one
  • Reliable, consistent, and able to follow through
  • Takes pride in running a clean, structured kitchen We ll train and support the right person but this role does require stepping into real responsibility
