In this energetic role, you will master the art of smoking and preparing meats, ensuring each dish meets our high standards of flavor, quality, and food safety. This position offers an exciting opportunity to showcase your culinary skills, mechanical knowledge, and passion for food production in a fast-paced, food industry environment. Your expertise will help deliver mouthwatering smoked dishes that delight our customers and elevate our brand. Duties Operate and maintain commercial smokers and other cooking equipment to produce consistent, high-quality smoked meats. Monitor cooking times, temperatures, and humidity levels to ensure optimal flavor and safety. Prepare meats and ingredients according to recipes and food safety standards, including proper trimming and seasoning. Maintain cleanliness and sanitation of all food preparation areas in compliance with HACCP (Hazard Analysis Critical Control Point) and CGMP (Current Good Manufacturing Practices) guidelines. Conduct regular inspections of equipment for mechanical issues; perform basic troubleshooting and maintenance as needed. Follow strict food handling procedures to ensure safe food processing, storage, and transportation. Assist with food preparation tasks such as slicing, packaging, and presentation to meet quality standards. Operate forklifts or other machinery safely when required for ingredient handling or storage. Document cooking processes, temperature logs, and sanitation activities accurately for compliance purposes. Experience Proven experience in cooking, smoking meats, or working in a restaurant or food production environment. Strong knowledge of food safety protocols including HACCP and CGMP standards. Familiarity with baking, food processing, manufacturing practices, and general kitchen operations. Mechanical aptitude with the ability to troubleshoot smoker equipment or kitchen machinery. Basic math skills for measuring ingredients and adjusting recipes accurately. Skilled in knife handling, food preparation techniques, and maintaining sanitation standards. Previous experience working with forklifts or similar equipment is a plus. Knowledge of the food industry's best practices in food handling, safety procedures, and quality control is highly desirable.
