Immediately About us Distinctive Foods makes lahvosh flatbread crackers (Chicago Flats) at our Wheeling, IL bakery, which is SQF certified. The sheeter sets the dough sheet that everything downstream depends on: thickness, width, and steady flow into the tunnel oven. What you'll do Before start-up, check that the sheeter, rollers, belts and guards are clean, sanitary, correctly assembled, and free of tools or foreign material Set up and run the sheeter for each product: line speed, roller settings, and dough thickness Feed dough evenly, and watch the dough sheet for thickness, width, consistency and visible defects Adjust within the set operating ranges to keep product flowing steadily to the oven Trim the dough, collect good rework in the designated containers, and handle it by procedure Throw out any dough that hits the floor or gets contaminated Stop the line and call the supervisor when there's a significant equipment, food-safety, quality or safety problem Help with changeovers, set-up and start-up Complete production and quality records accurately Clean and sanitize the sheeter, conveyors, utensils and work area by procedure Follow the GMP, allergen-control, sanitation and safety procedures What we're looking for Can follow written and verbal instructions, product specs, and machine settings Basic mechanical aptitude: comfortable making routine equipment adjustments Notices changes in dough and in how the line is running, and speaks up quickly Dependable attendance and works well on a team Machine-operation or food-manufacturing experience preferred, not required Bilingual English/Spanish a plus Physical requirements Stand and walk for the whole shift; bend, reach, push, pull, repetitive motion Repeatedly lift up to 20 lb overhead; occasionally up to 50 lb Work around moving equipment, heat, noise, flour dust and changing temperatures while wearing the required
