Job Summary:
The Cellar Technician is responsible for executing beverage batching, blending, and tank operations in accordance with approved formulas, batch sheets, and quality standards. This hands-on role focuses on accurate ingredient handling, precise documentation, and safe, sanitary execution of cellar operations to ensure consistent, high-quality finished beverages. This position requires strong attention to detail and the ability to manage multiple priorities in a fast‑paced beverage manufacturing setting. The Cellar Technician will work closely with our Beverage Blending Manager, Quality Assurance and Cellar Manager.
Responsibilities and Duties:
Accurately weigh, measure, and blend ingredients according to approved batch sheets, formulas, and SOPs. Perform beverage batching, blending, and tank transfers safely and efficiently. Complete all batch records, production logs, and ingredient usage documentation accurately and in real time. Verify ingredient lot numbers, quantities, and expiration dates to ensure full traceability. Assist Quality Assurance with sampling and monitoring pH, Brix, color, flavor, and viscosity. Follow blending schedules to ensure product readiness for filling or packaging lines. Identify and report blending variances, equipment issues, or ingredient discrepancies. Maintain cleanliness and organization of cellar and blending areas in compliance with GMP standards. Follow all food safety, HACCP, and workplace safety procedures. Support continuous improvement initiatives related to efficiency, yield, and product consistency.
Qualifications, Skills & Requirements:
High school diploma or GED required. 5+ years in beverage or food manufacturing, preferred. Basic understanding of batching, blending, and ingredient handling processes. Strong understanding of beverage manufacturing utilities: CO₂, air systems, CCPs, food safety, and sanitary processes. Knowledge of OSHA and CRA regulations, industrial safety, HACCP, food safety standards and GMP requirements. Excellent time‑management and communication skills. Strong attention to detail with measurements and documentation. Ability to lift 50+ lbs and remain on feet for long periods. Comfortable working at heights, in confined spaces, and around moving equipment. Ability to work occasional nights/weekends for emergencies or projects, as needed.
