Job Description

Summary:
The Production Supervisor understands and fully participates in the Ross School Café's concept of a healthy team environment, prioritizing communication with supervisors and co-workers as a means to meeting the production standards and producing exemplary products the Ross Café puts forth daily. The Production Supervisor oversees all of the work of the
Lower Level Kitchen:
Prep Chefs, Dishwasher and Receiving Clerk. The Production Supervisor communicates directly with the Executive Chef, Lead Chef Supervisor, Dining Room Staff and Receiving Clerk to coordinate the receiving of products, both prepared and unprepared, for all three daily menus as well as Residential Life weekend brunch pack outs.

Major Areas of Accountability:
Production Supervisor possesses abilities to assist and replace the Chef Supervisor and other Kitchen or Dining Room positions in their absence or when needed. Production Supervisor will work on special events, and should be proficient in event preparations, set up, timing and related production. Ensure that all food is produced in accordance with the standards, specs, recipes and best practice policies of the Ross School Cafe and Suffolk County Health Department. Responsible for assisting in maintaining daily food production data, budgeted food and labor costs. Responsible for producing any supplemental food items not anticipated by scheduled service and to guarantee that enough food is available to finish out service. Helps to oversee the freshness of all prepared items by enforcing proper rotation of food items being prepared, properly storing prepared food items, and preparing close amounts of food items that the day's business requires. Strives for maximum yields from raw products and eliminates waste in all areas of preparation. Adheres to proper thawing practices and teaches and enforces proper thawing with the entire kitchen staff. Radiates professional objectives and attitudes to inspire employees to work at maximum efficiency and with the utmost sense of professionalism. Participates in the on-going training of the kitchen staff and ensures that all staff members are trained appropriately for their level of responsibility prior to assigning them to a specified task. Supervises staff to ensure timeliness, correct adherence to uniform, attendance and time clock policies, and that all job duties have been accomplished prior to their leaving, including all cleaning and sanitation. Responsible for reporting to Executive Chef any problem with equipment, supplies, employee conduct or any other issues in question. Required to follow the designated instructions for cleaning and maintaining each work area and the equipment in that area and teaching all staff the same cleaning and maintenance procedures. Handles all equipment carefully and performs job duties in a safe manner to minimize the probability of accidents and understands, complies with, enforces and practices proper lifting procedures. Supervises staff to adhere to safety standards and reports equipment mishandling or staff injuries promptly. Is responsible for reporting to Executive Chef any occurrences of an unusual or critical nature. Pay attention to school schedules, activities and events; is aware of, attends and reports on all school-wide staff meetings
Qualifications:
To perform this job successfully, an individual must be able to perform each essential duty satisfactorily. An individual must be able to accept and assume assigned responsibilities and make responsible decisions when required. Education and/or
Experience:
Prior experience in professional kitchen environment required. Communicate in English and Spanish preferred. Food production experience.
Physical Demands:
Applicants should be able to perform all tasks required in a professional kitchen environment, including the ability to lift up to 50 lbs.
Skills/Knowledge/Abilities Required:
Computer skills include proficiency in Google Docs, Microsoft Word and online ordering programs. Ability to engage in teamwork and work cooperatively with others. Ability to problem-solve/troubleshoot. Ability to manage projects from initiation to completion. Ability to comprehend, create, and carry out instructions furnished in written and/or oral form. Applicants should be able to write and prepare recipes, has a working knowledge of estimating food orders in coordination with menus, prepare requisition and preparation lists for daily menus, write work schedules and be accountable for adherence to schedules by all staff that the Production Manager supervises. Ability to relocate from one physical space to another throughout the course of the day as well as attend off-site meetings. Ability to read, analyze, develop and interpret documents in English. Ability to speak effectively before groups and/or employees of the organization.

$18.00 - $22.25 per hour
