This role also carries plant‑wide operational oversight , ensuring the facility is fully prepared for production each day and that all lines start at 6:30 AM without delay. The scope of this position covers the entire plant — from raw receiving , through cooking , packing , and shipping — with emphasis on coordination, planning, documentation accuracy, and operational flow. Key Responsibilities Food Safety, HACCP & USDA Compliance HACCP oversight — Maintain, update, and verify the facility's HACCP plan; lead annual reassessments and validations. CCP verification — Review and verify all Critical Control Point records daily. ATP & environmental swabbing — Conduct ATP testing, pathogen swabs, and sanitation verification; ensure corrective actions are completed. USDA compliance — Serve as primary contact for USDA inspectors; respond to NRs and ensure regulatory adherence. Internal audits — Routine audits of GMPs, sanitation, CCPs, and prerequisite programs. Recordkeeping — Maintain audit‑ready documentation for all food‑safety and quality programs. Training — Train staff on HACCP, sanitation, CCP monitoring, GMPs, and documentation accuracy. Traceability & recall readiness — Maintain traceability systems and conduct mock recalls. Plant‑Wide Operational Oversight Oversee daily operations across all production areas: hot dogs, steaks, chicken, pork, ribs, cooking, packing, and support functions. Monitor flow between departments to prevent bottlenecks, downtime, and quality risks. Ensure consistent communication between production, maintenance, QA, and warehouse teams. Inventory Support & Material Control Assist with inventory accuracy for raw materials, packaging, and WIP. Maintain FIFO control for all materials used in production. Partner with warehouse and procurement to ensure materials are staged before shift start. Start‑Up Readiness & Daily Efficiency Own the process ensuring all lines start at 6:30 AM . Verify materials and equipment, and documentation are ready before start time. Identify and remove barriers that delay start‑up or reduce throughput. Continuous Improvement & Efficiency Gains Track downtime, changeover times, and throughput across departments. Lead continuous improvement projects to increase efficiency and reduce waste. Support standard work, training, and process consistency across the plant. Leadership & Communication Serve as a central coordination point between departments. Provide coaching, feedback, and support to team leads and operators. Communicate daily priorities, changes, and expectations clearly and consistently.
