Deli/Bistro Job Description & Expectations:
Our Bistro, Stella's at the Famous Bonanza Casino, is currently open seven days a week, serving a limited menu of fast-casual food as an amenity to our Gaming guests and employees. We are also opening a new deli at the remodeled Millie's Restaurant space at Easy Street Casino. Each deli is ideally run by at least two staff members, but shifts may be staggered or run by one person if necessary after proper training and within reasonable business levels. Each deli staff member is expected to be able to run the cashier/Point of Sales ("POS") system, handle cash, credit cards, comps and discounts, as well as prep food, run the hot and cold line, keep the dining room clean and stocked and bus/dish the deli as needed as business turns over. The Deli is an open-air environment where guests can see and hear all that staff do, and so staff are expected to be professional in appearance and manner at all times, provide excellent customer service, and accommodate guest needs within reason and within a reasonable amount of time as needed. All staff members are expected to be able to lift up to 35 lbs, stand 95% of a 10 hour shift, write, speak, hear and see clearly. All staff are expected to be able to operate the deli solo or by themselves once training is completed, though we understand that ticket times may be longer due to the employee doing multiple job duties. Staff are scheduled in half an hour or more prior to the venue opening, begin taking food orders upon opening time, and, if scheduled "to Close" must complete all closing duties in a timely manner prior to turning in their restaurant paperwork and restaurant bank at the end of their shift. Staff are eligible for cash tips and must claim them per shift in their Paycom profile prior to punching out for their shift. All staff must verify their shift hours and tips are input properly in their Paycom profile accurately prior to the end of each pay period. All staff must follow the schedule as posted unless other accommodations are arranged by and approved by management. All Deli staff are responsible for the following: Ø Greet guests with a positive and welcoming acknowledgement within 1-2 minutes, accurately take their order using the Point of Sales computer system, take payment and help prepare and expedite orders. Employees must sign their ticket for their discount/comp'd meal. Ø Convey to guest their estimated ticket times to improve customer service; provide a buzzer if necessary to page the guest when their order is ready. Ø Collects payment from customers. All sales must be rung into cash register and servers are responsible to maintain proper cash control procedures to account for all sales. Ø Prep, stocks and prepares food orders as they come in from guests and employees, using teamwork mentality if working with other team member(s). The menu in the Deli is very quick and easy, including personal pizzas, tacos, chimichangas, wraps, chicken wings and tenders, as well as burgers. Ø Bus tables in clearing plates, glassware, etc. and clean dishes as needed. Ø Maintain a clean and organized kitchen per ServSafe standards. Ø Ensures guest satisfaction by following up after delivering food order, and correcting any mistakes/forgotten items. Ø Maintain needed stock (dressings, sour creams, rolls, etc.) for working shift and future shifts. Rotate stock as necessary and as food orders come in to use items in accordance with food safety guidelines. Ø Sweep and bus dining room as needed throughout the shift. Keep counter items, napkins and soda station stocked and ready for guests at all times. Ø Totals receipts, at end of shift, to verify sales and clears cash register and prepares and delivers accounting paperwork and cash register deposit to the appropriate area before leaving shift. Ø Assist in cleaning restaurant during slow periods to ensure a healthy environment for our customers. Ø Perform side-work to ensure a clean, neat, well-organized work area - both front of house and back of house. All side-work must be completed before checking out with the MOD and clocking out of your shift. Ø Check in the SYSCO food orders, rotate stock as you put items away in their proper place. Ø Take only the allotted breaks (two 10-minute breaks, or four 5-minute breaks, when business levels allow). Restaurant employees eat "on the go" and must ring in their items (up to $15 food comp'd per shift for each restaurant meal must be accounted for by each employee). Restaurant employees are not deducted for their lunches and eat "on the go" - off the line when business levels allow. Ø Deep Cleaning tasks should be completed when business levels allow by all staff. Ø No cell phones allowed in the deli without explicit management approval. Ø Stock for the next shift. Make sure it is neat, wiped down and presentable. Ø Check in order deliveries and put orders away in a timely manner to ensure food safety. Ø Follow all other Employee Policies per the G.F. Gaming Employee manual and food safety trainings. Ø Complaints, issues or concerns should immediately be brought to the Manager on Duty to work towards resolution, and should be documented in writing then submitted to the HR box after the MOD and the Restaurant Manager (as applicable) for recordkeeping purposes per Company policy. Ø Set up the next shift for success.
