Briny Swine is a high-volume, wood-driven kitchen built on barbecue, Southern technique, and a commitment to doing things the right way. We focus on consistency, strong execution, and a team that takes pride in the work without cutting corners.
Position Overview:
We're looking for a Sous Chef who can step in and lead from the front. This is a working leadership role—you'll be on the line, in the prep, and involved in the day-to-day decisions that keep the kitchen running at a high level. You should be comfortable managing people, holding standards, and keeping service tight even when it gets busy.
Key Responsibilities:
Support the Chef in all daily kitchen operations Run service and lead the line with consistency and urgency Maintain quality across all stations, including smoked and wood-fired items Enforce cleanliness, organization, and food safety standards Assist with ordering, inventory, and cost control Train and develop the team, setting clear expectations Take ownership of the kitchen when the Chef is not present
Qualifications:
Previous Sous Chef experience or strong leadership background in a high-volume kitchen Experience with barbecue, live fire, or similar cooking styles is a strong plus Solid understanding of prep systems, organization, and kitchen flow Able to stay composed and effective under pressure Strong communication and accountability as a leader Takes pride in consistency, details, and execution
Schedule & Compensation:
Full-time, 50+ hours per week Salary based on experience and performance
