We are looking for an Assistant Culinary Director to help lead the next phase of growth for one of the most respected independent hospitality groups in the Chicago suburbs. This is not a traditional corporate chef role. We are looking for someone who can help build systems without losing soul — someone equally passionate about flavors, operational efficiency, team development, and innovation. The Assistant Culinary Director will work closely with our Culinary Director and leadership team to strengthen commissary operations, improve restaurant performance, support menu development, and help scale future growth initiatives. Commissary & Production Operations Oversee centralized commissary production and prep systems. Improve organization, production flow, inventory management, and scalability. Create systems that improve consistency across multiple restaurant locations. Develop more efficient prep methods, station structures, and kitchen workflows. Help reduce waste and improve product yields. Culinary Systems & Restaurant Support Collaborate with restaurant culinary teams to improve execution and labor efficiency. Support recipe standardization, training systems, and operational consistency. Work alongside leadership to identify opportunities for better margins and smarter kitchen operations. Assist with labor optimization initiatives while maintaining food quality and BTG standards. Menu Engineering & Profitability Collaborate on menu development focused on creativity, efficiency, and profitability. Improve ingredient cross-utilization and reduce operational complexity. Help create recipes and systems that are scalable across multiple concepts and future growth. Balance innovation with strong food cost and labor awareness. Retail & Growth Initiatives Support development of new revenue channels including: Prepared foods Breakfast pastries Retail and commissary expansion projects Help build scalable production systems for future growth and multi-unit expansion. What We're Looking For Strong culinary leadership and kitchen systems experience. Experience managing high-volume prep or commissary operations is highly preferred. Strong understanding of food cost, yields, labor management, and kitchen efficiency. Organized, systems-oriented, and operationally strong. Creative mindset with the ability to execute consistently at scale. Passion for mentoring teams and developing talent. Comfortable balancing creativity with business realities. Experience in multi-unit restaurant operations is a major plus. Bilingual (Spanish). What Success Looks Like Lower labor through smarter systems and centralized production.
