Responsibilities:
- Must maintain a safety conscious mind throughout the shift
- Must follow all required food safety policies and be 100% compliant with GMPs
- Must be able to handle product up to 50 lbs.
- Must maintain a sharp knife
- Removal of the clod portion of the carcass, which covers the scapula, shoulder joint, humerus, and elbow joint
- Must remove this portion of cut with care as to not introduce deep cuts to the chuck short rib, chuck, teres major, chuck flap, flat iron, or clod itself
- Will also mark the scapula bone around the ventral and proximal sides of the bone in preparation for being pulled
- Must ensure shoulder joint has no lean attached after removal of clod
- Familiarity with yield impact of the job
Working Conditions:
- Production setting
- Exposure to various chemicals, machinery, and knives
- Slippery floors, cold temperatures, and loud ambient noise
- Exposure to cold and dampness to hands and fingers
- Standing for extended periods of time
- Repetitive motion of upper body and extremities
- Fluctuating time schedules
Qualifications:
- Must possess the will to learn and handle large pieces of product
- A certain level of physical fitness
- Knife experience is preferred
- Ability to work 50+ hours
- Ability to work with others
