Summary
Responsible for all activities on the assigned shift related to the operation of the Smokehouse Department.
Essential Duties & Responsibilities
The essential duties for this job include the following, but other duties may be assigned.
Provide direction to assigned employees as necessary to insure the proper cooking of the meat product being made.
Prepare Smokehouses, calibration and ensure cleanliness
Determine if the kitchen is running the correct product according to the packaging schedule.
Make certain that the smokehouses are working according to the specifications required for each product line.
Maintain a record of product runs to determine compliance with established standard.
Determine the proper order for product to be packaged.
Basic computer skills used for running houses
