Prepare and portion fish, rice, garnishes, sauces, and other ingredients. Maintain cleanliness and organization of the sushi bar, kitchen, and workstations. Wash, sanitize, and properly store knives, utensils, cutting boards, and equipment. Assist with receiving, storing, and rotating fresh seafood and ingredients. Support the chef during omakase service by preparing plates and ingredients efficiently. Monitor food quality, freshness, and proper storage temperatures. Help with opening and closing duties, including restocking and cleaning. Follow food-safety, sanitation, and restaurant procedures. Provide professional and attentive support to the sushi chef and service team.
