This is a hands-on leadership role for someone who can run a high-volume kitchen, manage a diverse team across multiple stations, and maintain consistent, high-quality food across three distinct culinary disciplines. ## Responsibilities
Oversee all kitchen operations, including the grill/steak station, seafood preparation, and sushi bar
Develop and refine menus that reflect coastal casual cuisine while maintaining quality and consistency
Hire, train, schedule, and manage kitchen staff, including sushi chefs, line cooks, and prep staff
Manage food costs, inventory, ordering, and vendor relationships (with particular attention to seafood freshness and sourcing)
Ensure compliance with health, safety, and sanitation standards, including raw fish handling protocols
Maintain quality control across all stations during service
Collaborate with ownership/management on menu pricing, specials, and seasonal offerings
Manage labor costs and kitchen budgets
Train staff on food safety, knife skills, and preparation standards
Handle scheduling, performance management, and team culture in the kitchen ## Requirements
Proven experience as a Head Chef, Executive Chef, or Kitchen Manager in a full-service restaurant
Strong experience with seafood and steak preparation; sushi experience strongly preferred (or proven ability to manage a sushi program/sushi chefs)
Working knowledge of kitchen management, including inventory, ordering, and cost control
Food Safety Manager certification (ServSafe or equivalent) required or obtainable
Experience managing and training kitchen staff across multiple stations
Ability to work in a fast-paced, high-volume environment
Strong organizational and leadership skills
Availability to work nights, weekends, and holidays as needed ## Preferred Qualifications
Culinary degree or formal training
Experience opening or running a coastal/seafood-focused concept
Established relationships with seafood vendors/suppliers
