The AGM is expected to translate The Maren Co. standards into consistent daily execution, coach the team in real time, maintain strong controls, and assume full venue leadership when the GM is absent. Essential Functions & Responsibilities Serve as manager-on-duty for opening, service, transition, and closing shifts; ensure all checklists, cash controls, staffing positions, side work, and security procedures are completed. Direct hosts, servers, bartenders, barbacks, runners, and other assigned team members; rebalance sections and staffing based on business volume. Conduct lineups and pre-shifts; communicate menu changes, 86 items, reservations, VIPs, events, safety issues, sales priorities, and service standards. Monitor guest experience and table flow; resolve complaints and service failures with urgency, sound judgment, and documented follow-up when needed. Assist with scheduling, timecard review, payroll accuracy, training plans, performance documentation, hiring, onboarding, and progressive discipline. Monitor daily sales, labor, comps, voids, discounts, refunds, cash over/short, deposits, and closing reports; escalate unusual variances immediately. Partner with culinary leadership to maintain ticket-time, plating, allergy communication, expo, sanitation, and product-quality standards. Complete operational audits for cleanliness, bathrooms, music/lighting, temperature, exterior presentation, service stations, bars, storage, and closing security. Qualifications & Requirements 3+ years of full-service restaurant or bar leadership experience, including regular manager-on-duty responsibility. Strong floor leadership, coaching, cash-handling, scheduling, and guest-recovery skills. Ability to understand basic P&L drivers and manage labor and controllable costs during a shift. Food safety and responsible beverage service certifications as required by law or company policy. Availability for evenings, weekends, holidays, special events, and late-night operations as business needs require. Physical Demands & Work Environment Stand/walk for extended periods and move rapidly throughout dining rooms, bars, kitchens, stairs, patios, and service areas. Frequently lift/carry up to 25 pounds; occasionally assist with heavier objects using safe team-lift practices. Work in a fast-paced environment with heat, noise, cleaning chemicals, wet floors, and alcohol service. Schedule Expectations Schedule is based on business needs and may include early mornings, evenings, late nights, weekends, holidays, special events, meetings, and required training.
