Mess Hall Job Summary:

The Dining Facility Manager will oversee the daily operations of a mess hall at Camp Guernsey. The ideal candidate will ensure the highest standards of food quality, service, and sanitation, while adhering to military regulations and guidelines. This role involves managing staff, inventory, budgeting, administrative work, invoicing and coordinating with various agencies and government personnel to provide exceptional dining experiences.

Key Responsibilities:

Operational Management:

Oversee daily operations of the dining facility, ensuring efficient and effective service. Develop and implement standard operating procedures (SOPs) in accordance with military regulations. Monitor food preparation and service to maintain high standards of quality and safety. Create menu's, control food cost, labor cost and properly invoice government agencies.

Staff Supervision:

Recruit, train, and manage dining facility staff, including scheduling and performance evaluations. Foster a positive work environment that promotes teamwork and professional development. Ensure staff adherence to all safety and sanitation protocols.

Inventory and Budget Management:

Manage inventory levels, conduct regular stock checks, and coordinate with suppliers for timely replenishments. Develop and manage the dining facility budget, ensuring cost-effective operations. Track and report on financial performance, identifying areas for cost savings and efficiency improvements.

Customer Service:

Ensure a high level of customer satisfaction by addressing feedback and implementing improvements. Coordinate with military personnel to understand dining needs and preferences. Plan and execute special events and themed meals to enhance the dining experience.

Compliance and Safety:

Ensure compliance with all health, safety, and sanitation regulations. Conduct regular inspections and audits to maintain high standards of cleanliness, quality control and safety. Implementation of SOP's is a requirement for this position. Implement corrective actions to address any deficiencies identified during inspections.

Qualifications:

Experience:

Minimum of 2 years of experience in food service management, with at least 2 years in a supervisory or management role. 2 years experience in large banquet function food service. 1-2 Years of Menu Creation Experience in required. 2 Years of Cost Control Experience is preferred. Previous experience in a military dining facility or large-scale food service operation is preferred.

Skills:

Strong leadership and team management abilities. Excellent organizational and multitasking skills. Proficient in budgeting, inventory management, and cost control. Exceptional customer service and communication skills. Knowledge of food safety and sanitation standards

Certifications:

ServSafe Food Protection Manager Certification or equivalent. First Aid and CPR certification preferred. Culinary Degree preferred but not required.

Physical Requirements:

Ability to stand for extended periods and lift up to 50 pounds. Willingness to work flexible hours, including weekends and holidays.
