Job Description

Develop new protocols and systems, then help develop and manage the team that will implement them. We are reviving New Gloucester's 135-year-old community hub and marketplace, much as we ran it 2008-2022, though this time we'll offer a much larger array of meals, sides, salads, soups, and such; Ready-Made and available out of the cooler. This production occurs in our downstairs kitchen, which is part of a retail market of meats, cheeses, produce, beverages, gourmet groceries, and basics. On the floor above is the cafe, which serves sandwiches, wraps, salads, breakfast, and more: 3 meals a day, seven days a week, both to-go and in our historic dining room area. We also do wood-fired brick oven pizza; made-to-order, as slices, and pre-cooked out of the cooler. We anticipate your daily focus to be on managing the downstairs Ready-Made foods production, prep for the cafe, pastry baking, as well organizing and ordering the kitchen food inventory. We are hiring a Pizza Production Line Cook, and the owner largely manages the cafe staff, but your input and purview would cover all elements of food production and staffing. We try to make exceptional simple foods priced for mass consumption, so in-depth labor and food cost analysis is as important as culinary prowess. Also paramount is a respect engendering management style, a love for honing the efficiency of systems, and an understanding of the value of product consistency.
