Job Description

Mustard's Bagels in Culver City, California is seeking a Lead Baker to join our team as we transition from pop-up to brick and mortar. Mustard's may be newer, but we have rapidly gained attention and accolades for our 72-hour fermented sourdough bagels and our market driven, unique prepared bagels. We currently serve a small number of wholesale clients in addition to operating in-person service four days a week, but the lead baker role will be a full time, 5 day-a-week job as we renovate our space and ramp up our operation for full time service. While bakery production, including leading dough production, managing pre-ferments, shaping dough, mixing schmears and leading a small team will be the focus of the role, this person will often be asked to help with other kitchen tasks from washing dishes to ingredient prep before service. We're a small team and we all pitch in with everything. As we grow, this role will become more specialized. The ideal candidate for this role has a year or more of high end sourdough bread baking experience as well as experience in busy restaurant kitchens. The idea of joining an ambitious team early in its journey, working closely together to figure things out on the fly and build systems as it goes will be an exciting proposition to the right candidate
Key Responsibilities:
Lead and organize dough and other ingredient production Train others in production tasks Document each week's bake and suggest process tweaks when necessary Run breaks during shift Work hands on in varied ingredient prep tasks
Key Qualifications:
Fluent English speaker (Spanish a +) 1 year + Professional bread/pizza/bagel baking experience preferred Sourdough experience preferred Restaurant kitchen experience Positive outlook and disposition Ability to regularly lift 50lbs Ability to frequently twist, turn and bend over Ability to work in occasionally hot or cold temperatures Teamwork & communication skills Servsafe Certified Ability to thrive in fast-changing environment Professional knife skills Qualities we seek: Leadership by example Leadership by teaching Punctuality Efficiency, cleanliness and food safety Highest possible quality standards Strong communication, written and verbal Accountability and ownership of tasks through completion
