Job Overview We are seeking a passionate and skilled Artisan Bread Baker and Department Manager to lead our bakery team in crafting exceptional baked goods and managing daily operations. This dynamic role combines hands-on baking expertise with leadership responsibilities, ensuring the production of high-quality artisan breads, pastries, and other baked items while maintaining a clean, safe, and efficient workspace. The ideal candidate will bring culinary experience, a keen eye for detail, and a proactive approach to food safety and team management. Join us to inspire creativity in baking and deliver delightful experiences to our customers through expertly crafted baked goods! Responsibilities Oversee the entire Bread department, ensuring smooth daily operations and high standards of food quality and safety. Prepare a variety of artisan breads, rolls and specialty loaves, following established recipes with precision. Manage dough preparation, proofing, baking, and finishing processes to ensure consistent product excellence. Supervise bread staff, providing training on baking techniques, food handling, packaging, and equipment operation. Maintain a clean workspace by adhering to sanitation protocols, proper storage practices, and equipment maintenance routines. Ensure food safety management by following all health regulations, monitoring temperature controls, and documenting procedures accurately. Support packaging efforts for retail or catering orders while ensuring presentation standards are met. Operate kitchen equipment safely and efficiently including mixers, ovens, proofers, knives, and other bakery tools. Uphold recipe adherence to maintain product consistency across all baked goods. Manage wholesale relationships, weekly orders and pars with personal interactions with chefs and cafe managers to provide superior customer service Utilize production software to manage daily and weekly orders accurately in order to create weekly production schedule Create a weekly staffing schedule to manage a 7 day operation of mixing, shaping and baking Innovate to solve challenges and introduce new products, as needed Experience Proven culinary experience in artisan bread baking Demonstrated high-volume production experience in a fast-paced bakery or food industry setting. Strong culinary skills and dough preparation expertise essential for consistent quality results. Experience in food safety management practices aligned with industry standards. Previous leadership or supervisory experience in a bakery or kitchen environment preferred. Knowledge of operating kitchen equipment safely along with basic math skills for measurements and recipe scaling.
