Job Description

Job Summary Shell Restaurant is looking for an experienced, passionate, and detail-oriented Craft Bartender to join our team in an open-kitchen, coursed tasting menu concept . We are far from a stuffy restaurant—we love to have fun, joke around, and banter with our guests and each other. However, because our guests are investing in a premium dining experience, we maintain an elite standard of service.

Our beverage program is highly advanced, utilizing culinary chemistry like sous-vide infusions, fat washing, milk clarification, house tinctures, and custom acid blending (malic, tartaric, lactic) . While the heavy prep is handled behind the scenes, you are the face of this program. We need a bartender who views mixology as an art, operates with absolute intention and cleanliness under the spotlight of an open kitchen, and can guide guests through an intricate flavor journey with ease.
Core Duties & Responsibilities Execute High-End Mixology:
Build, shake, stir, and present complex craft cocktails perfectly to spec (including measuring every single ounce to ensure absolute consistency). Maintain the "Stage"
Mindset:
Work cleanly, gracefully, and intentionally in an open-kitchen environment where the bar and kitchen are always in full view of the guests.
Deliver Seamless Service:
Work in perfect unison with the kitchen and floor staff. This includes checking and replacing share plates, changing utensils between courses, and keeping water glasses filled without being asked.
Engage & Educate:
Break down complex beverage tech sheets (e.g., explaining botanical profiles like Pandan, Shiso, or Galangal and processes like clarification) into engaging, easy-to-understand conversations with curious guests.
Pre-Shift & Basic Prep:
Ensure the bar is fully stocked before service. Check and fill active bottles, juice fresh lemons and limes daily, and prepare basic syrups (like standard simple syrup).
Required Experience & Qualifications Experience:
Minimum of 2+ years of high-volume craft bartending or fine dining mixology experience.
Precision & Technical Skill:
Deep familiarity with proper pouring, shaking, and stirring techniques. An understanding of or strong interest in advanced culinary cocktail techniques is highly preferred.
Team-First Attitude:
Willingness to look past the bar rail to help the kitchen and floor team provide seamless service.
Communication Skills:
The ability to stay organized and calm under pressure while maintaining a warm, hospitable, and conversational demeanor with guests.

During this shift, you will work on the back end with our beverage director to see exactly how our house-infused liquors, clarified batches, and vegan foams are built from scratch. We believe that seeing how and why these drinks are made is the only way you can accurately and confidently talk about them to our guests on the floor.
