Assistant Director of Food & Beverage Hilton Miami Beach is a highly anticipated new-build hotel inside a historic Art Deco building steps from Collins Park, the Miami Beach Convention Center, Collins Avenue, Lincoln Road, and South Beach. With playfully designed guest rooms, three dining outlets — Amador, Savant Rooftop Bar, and Haute Mess Cafe — two rooftop pools, and flexible meeting space, this flagship 289-room property is now building its team ahead of its December 2026 opening.

THE ROLE

The Assistant Director of Food & Beverage supports the Director of Food & Beverage in overseeing daily operations across all outlets, banquets, and in-room dining, ensuring consistent guest service, financial performance, and brand compliance. This is a pre-opening hire — you'll help build this role from the ground up ahead of our December 2026 launch. Prior experience with a hotel opening is preferred for this hire.

KEY RESPONSIBILITIES

▪ Support daily operations across Amador, Savant Rooftop Bar, Haute Mess Cafe, banquets, and in-room dining.

▪ Assist in supervising F&B Managers and outlet leadership teams.

▪ Monitor guest satisfaction scores and lead service improvement initiatives.

▪ Assist with scheduling, labor cost management, and department budgeting.

▪ Ensure compliance with health, safety, and liquor licensing regulations across outlets.

▪ Step in for the Director of Food & Beverage in their absence.

▪ Support recruiting, hiring, and training of F&B leadership and staff.

▪ Coordinate with Culinary, Banquets, and Purchasing on outlet needs and event execution.

▪ Support pre-opening planning, budgeting, and staffing across all F&B outlets.

▪ Assist with pre-opening training and readiness reviews for outlet teams.

QUALIFICATIONS

▪ Bachelor's degree in Hospitality Management or a related field preferred.

▪ Minimum 4-6 years of F&B management experience, including multi-outlet exposure.

▪ Hilton or comparable brand experience preferred.
