Job Description

Role Overview The Cutter is responsible for performing carcass fabrication and primal cutting operations in accordance with Hawaii Meats' quality, yield, and food safety standards. This role ensures all products are processed to specification while maintaining strict compliance with USDA, HACCP, SSOP, and GMP requirements.
Key Responsibilities:
  • Fabricate carcasses into primals and subprimals in accordance with IMPS specifications and customer requirements
  • Trim and process product to meet quality, fat, and yield expectations
  • Operate equipment including saws, grinders, mixers, and packaging systems safely and effectively
  • Ensure all products are handled, packed, and labeled accurately
  • Perform and document required HACCP, SSOP, and GMP checks
  • Maintain cleanliness and organization of work areas throughout the shift
  • Identify and communicate any product defects, equipment issues, or food safety risks
  • Support equipment care, including proper handling, cleaning, and basic maintenance of tools and machinery
  • Follow all production schedules and priorities as directed by Plant Leadership
  • Execute tasks efficiently while maintaining accuracy and consistency
  • Protect yields by minimizing trim loss and avoiding rework
  • Maintain proper knife handling, sharpening, and tool control practices
  • Adhere to all safety procedures, including PPE requirements
Minimum Qualifications:
  • High school diploma or equivalent preferred.
  • Previous sanitation, janitorial, or food processing plant experience a plus.
  • Knowledge of food safety, GMPs, and sanitation practices preferred.
  • Ability to work with cleaning chemicals and follow all safety procedures (PPE required).
  • Ability to lift up to 50 lbs and work in cold/wet environments.
  • Strong attention to detail and ability to follow SOPs consistently. Key Performance Indicators (KPIs):
  • Product quality and adherence to specifications
  • Yield performance and reduction of waste
  • Compliance with food safety and regulatory requirements
  • Efficiency and consistency in production output
  • Cleanliness and organization of work area
Work Environment:
Cold, wet, refrigerated processing floor Fast-paced environment with repetitive tasks Use of sharp tools, vacuum sealing machines, and box cutters Must be comfortable working near raw meat products Frequent standing, walking, bending, and lifting in wet and cold environments. Exposure to cleaning chemicals, hot water, and pressure washing equipment. PPE (personal protective equipment) required at all times.
