Looking for an ambitious sushi chef to help open a new restaurant in Lake Tahoe. This is a rare chance to shape a concept from day one: direct influence over the recipes, systems, and team we launch with, and a month or two living in one of the most beautiful mountain towns in the country while you do it.
About the owner:
Foodie at heart, tech marketer turned restaurateur who's sick of turd-green matcha lattes and subpar sushi. Moved from NYC to Tahoe for the winters, stayed for the summers. We're opening in November 2027: a two-in-one spot in the Lake Tahoe area, with a handroll bar serving lunch and dinner alongside a cafe pouring matcha, specialty coffee, and Japanese pastries. The menu is built around classic and specialty handrolls
- spicy tuna, truffle ponzu hamachi, yuzu shiso salmon, dungeness crab, toro, uni
- plus izakaya-style bites like yuzu garlic karaage and gyoza.
Our goal is serious sushi quality in a format that's fast, approachable, and built for a mountain town. We're a small, hands-on opening team, and we're looking for an experienced sushi chef to help us get the program right before we open our doors. This is a short, focused engagement for someone who likes building from zero. What you'll do:
- Recipe-test, refine, and standardize our opening menu: handrolls, sushi rice, sauces, and small plates
- Dial in the rice program
- seasoning, cook, hold, and service workflow
- Write clear recipes and prep guides the team can execute consistently without you
- Train our opening crew on fish handling, knife work, portioning, and handroll production
- Help us set up prep systems, station layout, and ordering with the right distributors
- Advise on sourcing: where to get quality fish and specialty ingredients at the right cost Who you are:
- Real experience behind a sushi bar, ideally including opening or menu-building work
- You can teach. You explain the why, not just the how
- Comfortable owning food cost and portioning, not just craft
- Excited by the idea of putting a stamp on a new concept, then handing it off
