The ideal candidate has professional sushi experience, strong knife and fish-handling skills, and takes pride in quality, consistency, cleanliness, and presentation. We are looking for someone who can work independently at the sushi station while collaborating closely with the kitchen and service team. Key Responsibilities
- Prepare high-quality sushi, sashimi, nigiri, maki, hand rolls, and other sushi menu items.
- Break down, clean, trim, portion, and properly handle fresh fish and seafood.
- Prepare and maintain sushi rice with consistent texture, seasoning, and temperature.
- Maintain high standards for freshness, portioning, presentation, and overall food quality.
- Keep the sushi station clean, organized, properly stocked, and ready for service.
- Monitor seafood and ingredient quality, inventory, and proper storage.
- Minimize food waste through proper preparation, portioning, and handling.
- Work closely with the kitchen and service team to maintain smooth and consistent service. Qualifications
- Professional sushi chef experience strongly preferred.
- Strong knife skills and fish-handling techniques.
- Experience preparing nigiri, sashimi, sushi rolls, and sushi rice.
- Good knowledge of seafood quality, freshness, storage, and food safety.
- Knowledge of Japanese ingredients and cuisine preferred.
- Strong attention to detail, presentation, and consistency.
