- $80,000 base + bonus / benefits The Opportunity Dynamic Sous Chef needed to lead a high-energy team in a new restaurant concept located at the Hyatt Regency Clearwater Beach.
The right candidate will oversee the daily operations of JOTORO, a fresh Tex-Mex concept created by Michelin-starred chef Joe Isidori. JOTORO's from-scratch kitchen will serve up chef-driven regional favorites in a high-energy casual environment. Our straightforward Tex-Mex fare features artisanal tacos, sizzling fajitas, loaded nachos, and signature knife-and-fork burritos. The lively full bar will offer handcrafted cocktails including margaritas, spirited frozen concoctions and ice-cold beer. As Sous Chef, the main function is to ensure the kitchen staff prepares high-quality food items, quickly and efficiently in a fast-paced, high-energy environment. Sous Chefs will perform other duties in the areas of food and final plate preparation including prepping, cooking, plating, and garnishing food items. What You'll Do
- Be able to make clear and quick decisions in a fast-paced, high-energy work environment.
- Be able to handle high levels of stress during an 8
- 10 hour shift.
- Oversee preparation of a variety of meats, seafood, poultry, pizza, sushi, vegetables, and other food items in broilers, ovens, grills, fryers, and a variety of other kitchen equipment according to restaurants standardized recipes.
- Maintain employee schedules for certain departments within the kitchen
- Maintain inventories by keeping products at certain par levels.
- Streamlining the kitchen processes to maintain prompt service times.
- Setting regular cleaning standards for the kitchen and verifying that staff are maintaining sanitation levels.
- Rotating products to ensure FIFO and quality.
- Assume 100% responsibility for the quality of products served.
- Ensure sufficient levels and quality of food products at all line stations prior to each shift
- Portion food products prior to cooking according to standard portion sizes and recipe specifications.
- Maintain a clean and sanitary workstation area including tables, shelves, grills, broilers, fryers, sauté burners, convection ovens, flat top range, and refrigeration equipment according to state health standards
- Follow proper plate presentation and garnish setup for all dishes.
- Handle, store, defrost, and rotate all products properly.
- Supervise the closing cook team by closely following the closing checklist for kitchen stations. Assists others in closing the kitchen.
- Attend all scheduled employee meetings.
- Perform other related duties as assigned by the Kitchen Manager or manager-on-duty.
What We're Looking For Have at least 2 years of experience in a similar capacity. Must be able to communicate clearly and effectively. Be able to reach above and below shoulders, bend, stoop, squat, and twist repetitively throughout the shift. Be able to frequently lift and carry up to 50 pounds. Be able to work in a standing position for long periods of time. Be able to walk long distances. Must have good hygiene and grooming habits. Be subject to extreme heat and cold throughout the shift.
