As part of Pearl Hospitality, our team is passionate about creating memorable experiences while helping elevate Jacksonville's culinary scene. We are currently seeking a skilled and passionate Omakase Chef / Sushi Chef to join our growing team. Position Overview The ideal candidate has strong knife skills, experience working with high-quality seafood, and the ability to confidently execute nigiri, sashimi, and omakase service in a fast-paced fine dining environment. This role requires attention to detail, cleanliness, consistency, and the ability to work closely with both kitchen and front of house teams to create a seamless guest experience. Candidates should be comfortable handling and breaking down whole fish, preparing sushi rice to standard, and engaging in the rhythm and flow of omakase-style service. Responsibilities Break down and portion whole fish and seafood Prepare nigiri, sashimi, hand rolls, and other sushi items with consistency and precision Execute omakase service with proper pacing, presentation, and timing Maintain high standards for cleanliness, food safety, and organization Prepare and maintain mise en place for daily service Ensure proper storage and handling of seafood and ingredients Work collaboratively with the culinary team during service Maintain quality and presentation standards set by Norikase Assist with inventory, prep, and ordering as needed Help contribute ideas for seasonal offerings and menu development Qualifications Previous experience as a sushi chef or omakase chef required Experience breaking down whole fish required Strong knife skills and understanding of Japanese fish preparation techniques Ability to prepare nigiri and sashimi with consistency and attention to detail Fine dining experience preferred Ability to work cleanly and efficiently in a high-volume environment Strong communication and teamwork skills Passion for Japanese cuisine and hospitality Must be available nights and weekends What We Offer Competitive pay based on experience Opportunity for growth within Pearl Hospitality Creative and team-oriented environment Work with premium ingredients and evolving seasonal menus Opportunity to be part of a team helping shape Jacksonville's dining scene We're looking for chefs who are passionate about craftsmanship, hospitality, and creating an unforgettable omakase experience for every guest.
