Job Description
Build trust, understand team strengths and development needs, and lead by example. Be a visible, hands-on leader who teaches, coaches, and mentors culinary associates. Maintain standards for professionalism, appearance, conduct, hospitality, cleanliness, organization, and execution. Assist with recruiting, interviewing, onboarding, training, and developing culinary team members. Conduct daily lineups and team briefings covering priorities, menus, events, operational updates, and member needs. Partner closely with Executive Chef and Front-of-House F leadership for a cohesive member experience. Support a highly seasonal operation spanning à la carte dining, member events, banquets, and simultaneous activities. Lead and develop a BOH culinary team of approximately 10 associates. Maintain high standards of food quality, presentation, freshness, timing, consistency, and execution. Develop standardized recipes, preparation techniques, plating standards, and portion controls. Assist with menu development, recipe costing, product selection, and pricing recommendations. Support banquet and special-event execution, staffing, preparation, timing, and culinary quality. Minimize food waste, product loss, and unnecessary expense while ensuring proper storage, labeling, rotation, and handling. Maintain sanitation, cleanliness, organization, safety, and compliance with applicable health, food-safety, OSHA, and Club standards. Maintain appropriate visibility and engagement with members while representing Panther National's culinary standards and hospitality culture. Respond professionally and creatively to reasonable member requests and special dietary or culinary needs. Support innovative culinary programs and continually evaluate food quality, presentation, service execution, and member feedback. Understand the financial impact of daily culinary decisions and contribute to operational performance. Monitor food usage, waste, portions, yields, inventory, labor utilization, and scheduling. Assist with inventory, monthly reporting, variance analysis, forecasting, corrective action, and annual budget information. Use Club technology and systems to improve efficiency, communication, inventory, scheduling, and financial performance. Maintain strong professional relationships with food and supply vendors. Minimum 5 years of progressive culinary leadership experience, including Sous Chef, Chef de Cuisine, Club Chef, or comparable senior culinary leadership experience. Ideal candidate will have Sous Chef experience in a high-quality restaurant, private club, country club, luxury hotel, or resort. Private club, country club, luxury hotel, resort, or comparable hospitality experience preferred. Experience leading and developing culinary teams. Experience with banquet, special-event, and à la carte culinary operations. Experience working in a temporary, transitional, or non-traditional kitchen environment preferred. Strong understanding of food cost, labor management, inventory, purchasing, and kitchen financial controls. Strong knowledge of food safety, sanitation, and workplace safety standards. Comfortable with Jonas POS, Microsoft Excel, Word, Outlook, and emerging AI tools. Excellent written and verbal communication skills. Culinary Arts, Hospitality Management, or related degree preferred.
