Sushi Chef/Kitchen Cook/Preparation for Japanese Restaurant (Part Time) 3223 Lake Avenue, Wilmette, IL 60091 From $17 an hour - Part-time From $17 an hour - Part-time Job Summary Akai Hana in Wilmette is known for serving traditional Japanese cuisine/sushi to the neighborhood for over 30 years. We currently have two openings, one for sushi chef, and another for a position who can work both as a kitchen and a preparation chef; both of them part time. Sushi chef position will be required to have knowledge in all type of sushi (nigiri, maki and sashimi) and must be comfortable breaking down fresh fish and slicing them into servable pieces. We are a very fast paced restaurant and will be asked to make quality specialty rolls very quickly. As a Kitchen line cook you are required to prepare all sorts of our dish including appetizers, main course and fried items like tempura and Japanese style cutlets. At preparation you will be in charge of breaking down and cleaning fish and meat, cutting vegetables, cook rice etc. We desire a chef with previous experience in a Japanese restaurant, but an apprentice level chef are also welcome as long as they are willing to learn. Responsibilities Prepare ingredients and assemble dishes according to our recipes and presentation Understand the restaurant procedure and perform proper preparation necessary for smooth kitchen operation Operate kitchen equipment safely and efficiently, including knives, slicers, stoves, and other culinary tools Maintain cleanliness and organization of the kitchen area, including proper food handling and sanitation practices Collaborate closely with kitchen staff to communicate effectively about orders, special requests, and food safety procedures Follow all safety standards in production, including proper storage of ingredients and waste disposal Able to work flexible hours Communicate well with your fellow kitchen and floor staff and work as a team Desired Experience 2 yrs+ Previous experience in a Japanese restaurant Hands-on experience with food preparation, cooking techniques, and recipe adherence Familiarity with operating kitchen equipment safely and efficiently Strong knife skills with slicing techniques suitable for Japanese cuisine ingredients Understanding of food safety management practices and sanitation standards in a fast-paced kitchen environment Excellent communication skills to coordinate seamlessly with team members and ensure smooth kitchen operations
