Our chefs work with rescued food, locally grown ingredients, and purchased food to prepare fresh, nourishing meals that we would be proud to serve our own families. Because our ingredients change from day to day, this work requires creativity, flexibility, and strong culinary judgment. The Expo Chef is the final culinary checkpoint between our production kitchen and the community. Working closely with our Executive Chef and culinary team, the Expo Chef helps determine the composition of daily meals, oversees meal packaging and makes sure everything leaving our kitchen meets our standards for quality, portioning, presentation and food safety. This is a hands-on culinary role, and the Expo Chef will also assist with food preparation and production as needed. Our kitchen is powered by volunteers, so this role also requires someone who enjoys working with people. The Expo Chef directs volunteers during food preparation and meal packaging, teaches basic culinary tasks and helps create a welcoming experience for the people who give their time to our work. What You'll Do Work with the Executive Chef and culinary team to determine daily Community Meal needs and meal composition. Evaluate available prepared foods and ingredients and help turn them into balanced, appealing meals. Oversee the final assembly, portioning, packaging and staging of meals for our community feeding partners. Cook and assist with food preparation as needed. Maintain high standards for food quality, sanitation and safe food handling. Monitor food temperatures, storage, cooling, labeling and rotation. Direct volunteers working in food preparation and meal packaging. Teach volunteers basic culinary skills and safe food-handling practices. Monitor prepared and frozen meal inventory and communicate needs to the culinary team. Help ensure available food is used effectively and avoid unnecessary food waste. Record daily meal production, inventory and volunteer data accurately. Keep the expo and packaging areas clean, organized and ready for production. Help volunteers understand Feed Louisville's mission and why the work they are doing matters.
• Who We're Looking For You should be comfortable in a professional kitchen and have the culinary judgment to look at the food available and understand how to turn it into a good meal. You should have solid cooking and knife skills, understand professional food-safety practices and be comfortable working in a kitchen where ingredients and priorities can change quickly. You also need to enjoy working with people. Our volunteers arrive with very different levels of kitchen experience, and the Expo Chef needs to be able to teach, communicate clearly and keep everyone moving toward the day's production goals. Strong organization and attention to detail are important. This position also includes basic computer-based data entry for meal production, inventory and volunteer tracking. A current food-safety certification is required or must be obtained as a condition of employment.
