$100,000 - $120,000 per year Job Summary Amendment is an upcoming steakhouse at The Watershed development in downtown Sturgis, Michigan. The kitchen is built around live fire. A Grillworks wood-and-charcoal grill anchors the line, and steaks are dry-aged in house. The menu also includes a raw bar and a seafood program, and the bar serves craft cocktails. We are building something ambitious, and we hold every plate and every guest interaction to an uncompromising standard. The Executive Chef works closely with the Culinary Director to carry out Amendment's culinary vision. This is a hands-on leadership role for someone who wants to build a kitchen from the ground up. You'll join before opening and help shape the team, the systems, and the standards the restaurant will run on. Responsibilities Lead day-to-day kitchen operations at the restaurant and at our off-site prep and catering kitchen Execute the menu to documented recipes and plating standards, and keep every station consistent Oversee the live-fire program, including grill management, fire building, and cooking over wood and charcoal Manage the dry-aging and butchery program Hire, train, and mentor sous chefs, line cooks, and prep staff Lead pre-opening work: tastings, recipe testing, station setup, and training Handle ordering, vendor relationships, inventory, and food cost targets Keep the kitchen clean, safe, and sanitary, and meet Michigan food code requirements Build a kitchen culture where the team wins together and asking for help is a strength Requirements 4+ years in upscale or fine-dining kitchens, including leadership experience Strong grilling and butchery skills; live-fire and dry-aging experience strongly preferred Command of classical and contemporary technique Strong organization, communication, and cost control Ability to lead by example and stay composed under pressure A real commitment to hospitality.
