Job Description

Job Overview We are seeking a passionate, skilled, and creative Sushi Chef to join our upscale Latin fine dining restaurant . The ideal candidate will have strong experience preparing high-quality sushi, sashimi, nigiri, and specialty rolls, with the ability to create unique Latin-inspired makis that blend traditional sushi techniques with Latin flavors. This role requires excellent knife skills, strong attention to detail, cleanliness, creativity, and the ability to work efficiently in a fast-paced, high-end kitchen environment. Duties & Responsibilities Prepare sushi, sashimi, nigiri, makis, and specialty rolls with precision, consistency, and high presentation standards. Create and execute Latin-inspired makis using fresh seafood, Latin ingredients, sauces, garnishes, and creative flavor combinations. Maintain high standards of food quality, portion control, plating, and presentation. Handle, slice, and store seafood properly while following all food safety and sanitation guidelines. Ensure ingredients are fresh, properly labeled, organized, and stored at correct temperatures. Assist with menu development, specials, and creative sushi offerings. Monitor inventory levels for fish, rice, produce, sauces, garnishes, and sushi supplies. Work closely with kitchen staff, servers, and management to ensure timely and smooth service. Maintain cleanliness and organization of the sushi station before, during, and after service. Train or assist junior staff with sushi preparation, knife skills, rolling techniques, and plating standards when needed. Follow opening, closing, prep, and cleaning procedures as assigned. Uphold the restaurant's fine dining standards through professionalism, consistency, and attention to detail. Experience & Qualifications Previous sushi chef experience is required . Must have at least 1-2 years of experience preparing sushi in a restaurant, sushi bar, fine dining restaurant, or high-quality culinary environment. Strong knowledge of sushi preparation, including rolling, slicing, nigiri, sashimi, makis, sauces, garnishes, and plating. Experience with Latin-inspired sushi, fusion cuisine, or creative specialty rolls is strongly preferred. Must have excellent knife skills and strong attention to detail. Must understand proper seafood handling, food safety, sanitation, labeling, and storage procedures. Ability to maintain consistency and quality during high-volume service. Must be creative, organized, reliable, punctual, and able to work well with a team. Must be professional, clean, well-presented, and able to meet fine dining standards. Ability to work nights, weekends, holidays, and special events as needed.
