Carbone is an Italian-American restaurant created by Mario Carbone, Rich Torrisi and Jeff Zalaznick. The restaurant pays homage to the essence of the great Italian-American restaurants of mid-20th century New York. The food nods to that history, but takes its culinary cues from the great talents and techniques of the present and future. Familiar dishes like Seafood Salad, Linguini Vongole, Lobster Fra Diavolo, Chicken Scarpariello and Veal Parmesan elevated to a new level.
RESPONSIBILITIES
Create and prepare all pastry items as required by the business Prepare, clean and organize ingredients for use in the kitchen Come up with recipe ideas from scratch Plan the menu of desserts and pastry to complement savory items Ensure the kitchen is clean and sanitized at all times Oversee a team of junior pastry cooks and other staff members as necessary Maintain up to date knowledge about pastry arts and ingredients Carry out administrative duties to maintain an efficient workspace
REQUIREMENTS
Minimum 2 years of experience in high volume and fine dining restaurants preferred but not required Culinary diploma with a concentration in Pastry Arts or equivalent in experience strongly preferred Team-orientated and positive attitude Strong communication skills a must
