This position is pastry production focused. Looking for detail oriented individuals.
The Pastry Cooks responsibilities include preparing quality pastry items such as desserts, breads, ice creams, sorbets, creams, simple syrups, amenities, displays/centerpieces and special request items.
The pastry prep cooks will work with our Sous Chefs, and Chef De Cuisine to ensure every guest experiences the highest quality product. Pastry Cook's responsibilities include, but are not limited to, reporting to the Chefs, working in a team setting, restocking stations with all necessary supplies, preparing desserts and food for service and assembling dishes according to restaurant recipes and/or specifications, sanitation, and proper food handling. Pastry cooks will assist the Steward with daily, continuous cleaning of the kitchen as well as nightly breakdown. Pastry cooks are asked to take pride in their food, effort, and cleanliness as it is their responsibility. Job Responsibilities
- Consults with the Chefs to plan menus.
- Executes pastry orders for catered events and accommodates special requests.
- Attends kitchen staff meetings
- Demonstrates skill in baking pastries, desserts, cakes, cookies, sweets, and pies.
- Applies classic pastry baking techniques when preparing traditional pastries.
- Monitors equipment and ensures all specialized pastry baking tools are in working order.
- Maintains a good running order of specialized pastry baking equipment.
- Washes hands and wears personal protective equipment whenever necessary
- Safely stores all foods at proper temperatures
- Safely handles food to avoid any cross-contamination
- Ensures teammates clean assigned station inside, out, top, bottom, under, over, above, around, and below
- Always maintains utmost kitchen cleanliness
- Complies with all sanitation, recycling, and compost procedures and ensures that the teammates are doing the same
- Never walks away from an unorganized station
- Keeps work area tables, shelves, walls, floors, and drawers neat, clean, and sanitized
- Maintains equipment, informs Executive Chef of any malfunctions in equipment
- Manages keeping employee room and front of the building cleanPhysical Demands
- Consistently required to stand, walk, bend, squat, reach, grasp, twist and turn, talk, listen, and hear. Consistent fine finger manipulations and repetitive motions with hands and feet
- Occasionally required to stoop and climb ladders or step stools
- As needed, the position requires sitting, crawling, and climbing stairs
- Consistently required to lift up to 50 pounds without assistance. Occasionally required to lift up to 100 lbs. with assistance
- Work performed requires medium physical strength
- Consistently required to use near and peripheral vision, in addition to depth perceptionEssential Functions
