SOUS CHEF
— Ian Munsick's Cowboy Bar & Western Grill Inside The Landmark Hotel & Casino

  • Salary $55,000
  • 65,000 (based on total relevant experience and availability)
ABOUT US
Ian Munsick grew up on a working ranch in Sheridan, Wyoming, and this restaurant is his love letter to Western life. We serve Western food with Southern comfort: Grandma-style 'Western' fried steak with peppered country gravy, buttered garlic mashed potatoes, buttermilk biscuits, brined and hand-breaded chicken, steaks with a house rub, and house dressings, sauces and spice blends. Live music is at the center of the room, and hospitality is what we sell. We are a
SCRATCH KITCHEN.
Almost everything we serve is prepped in house. We buy very few items pre-made, although our plan is to expand operations enough to transition into a full-scratch kitchen over time. If you take pride in a full prep list, and food done right, we want to talk to you.
THE ROLE
Our Sous Chef supports our Executive Chef and Executive Sous Chef and leads the kitchen when Chef is off site. This is a hands-on, cooking
  • and prep-focused leadership role.
You will set prep levels, run the line, keep it consistent, and make sure every service goes smoothly. The Executive Chef and Executive Sous handle most of the admin and ordering. You will take on regular ordering and inventory support, but your main job is execution: product prepped, stations stocked and the line ready before every service.
WHAT YOU'LL DO
  • Lead the kitchen on the days Chef is off. Run the line, call the tickets and keep service tight and on time.
  • Set and maintain daily prep levels and par sheets. Make sure product is always prepped, labeled, dated and ready.
  • Prep from scratch: dressings, sauces, gravies, braises, rubs and spice blends, breading stations, mashed potatoes, biscuits, cornbread and butchery (portioning steaks and cuts in house).
  • Hold every plate to spec: portion weights, plating standards and our recipe book.
  • Train and develop line cooks and prep cooks in technique, station setup, speed and consistency.
  • Help with ordering, receiving, inventory counts and rotation (FIFO) on a regular basis.
  • Keep food safety and sanitation standards high: temps, cooling, labeling, allergens and cleanliness.
  • Lead by example and keep a positive, team-first kitchen culture.
  • Take on other management tasks as the Executive Chef and Executive Sous need, so that every service is executed well.
WHAT YOU BRING
  • 2+ years of line and prep experience in a high-volume, scratch-focused kitchen. Lead line cook, kitchen supervisor or sous chef experience strongly preferred.
  • A real understanding of basic prep technique and food science: emulsions, roux and gravies, braising, brining, breading and frying, baking basics, cooling and holding, and yields.
  • Steady leadership under pressure, and the ability to run a line and keep a crew calm and moving.
  • Organization:
    you think in pars, prep lists and timelines.
  • Knife skills, palate and consistency.
  • ServSafe Food Protection Manager certification preferred (or the ability to obtain it).
  • Full-time availability, including nights, weekends, holidays and peak events (live music nights, rallies, holidays). Preferred.
  • Must be 21 or older.
