Broiler Cook - Wood-Fired Grill Flagler Station Steakhouse | Islamorada, Florida Flagler Station Steakhouse is seeking an experienced Broiler Cook who knows how to command a high-temperature, wood-fired grill and consistently prepare premium steaks to exact guest specifications. This is a key position in our kitchen and requires strong timing, attention to detail, and the ability to remain focused during high-volume dinner service. Responsibilities Prepare premium steaks, chops, seafood, and other proteins over a wood-fired grill Cook steaks accurately to rare, medium-rare, medium, medium-well, and well-done temperatures Properly season, mark, rotate, rest, and finish all proteins Coordinate cooking times with sauté, fry, pantry, and expo stations Follow established recipes, portion standards, and plating specifications Inspect proteins for quality before cooking and serving Maintain proper grill temperatures and manage the wood fire throughout service Follow all food-safety, sanitation, labeling, and temperature-control procedures Keep the broiler station clean, organized, stocked, and ready for service Minimize waste while maintaining the highest quality standards Assist with daily preparation, breakdown, and kitchen cleaning duties Qualifications At least two years of broiler, grill, or steakhouse cooking experience preferred Wood-fired grill experience is strongly preferred Strong knowledge of steak cuts, cooking temperatures, and proper resting techniques Ability to perform in a fast-paced, high-volume kitchen Excellent timing, organization, and communication skills Dependable, professional, and committed to consistency Available to work evenings, weekends, and holidays Able to stand for extended periods and safely lift up to 50 pounds Must take pride in producing beautifully cooked, properly presented food What We Offer Competitive pay based on experience Full-time employment opportunities Professional steakhouse environment Quality ingredients and premium proteins Opportunities for growth within the Whale Harbor Restaurant Group Supportive leadership and a team-focused kitchen If you understand that a perfectly cooked steak is the centerpiece of the guest's experience, we want to meet you.
