We are looking for an experienced production cook/baker who already knows how to work with fresh pasta and doughs and can step into a daily production routine with confidence. This is not an entry-level position. We provide the recipes, the quantities, and 1-2 weeks of paid training on our methods, but you must already know how to make these products by hand. Must-have skills (required) You must be able to make all of the following from scratch: Fresh lasagna sheets (mixing, sheeting, and cutting pasta dough) Focaccia Roman-style tray pizza (pizza in teglia) Ladyfingers (savoiardi) Responsibilities Run morning production from 7:00 to 11:00
AM:
doughs, pasta sheets, baking, and assembly of the day's dishes Follow our recipes and quantities exactly so every batch is consistent Portion and package food and keep it ready for sale Serve customers and keep up with the lunch rush Start production again around 2:30-3:00 PM to get ahead on the next day Operate kitchen equipment safely, including ovens, spiral mixer, and dough sheeter Keep workstations, tools, and equipment clean and in line with food safety standards Communicate clearly with the team so production and service stay on schedule Qualifications Proven experience making fresh pasta and baked doughs from scratch in a restaurant, bakery, or pizzeria Understanding of dough handling: hydration, fermentation, proofing, and baking times Ability to follow recipes precisely and work to a production schedule Solid knowledge of food handling, sanitation, and safety standards Reliable and punctual; production starts at 7:00 AM sharp Able to work on your feet and at a steady pace, both independently and with a small team Experience with Italian cuisine is a strong plus Schedule Monday through Friday; we are open 7:00 AM - 6:00
