Job Description
Kai Legacy West is a sophisticated dining destination serving elevated Japanese cuisine, craft cocktails, and an exceptional guest experience. The Sushi Cook is responsible for preparing high-quality sushi and sashimi while maintaining consistency, presentation, cleanliness, and food-safety standards. The ideal candidate is detail-oriented, team-focused, and experienced in a fast-paced, upscale restaurant environment. Responsibilities Prepare sushi, sashimi, rolls, and other menu items according to recipe and presentation standards. Demonstrate strong fish-slicing, sushi-rolling, and sushi rice preparation techniques. Follow direction from the Executive Chef and Sous Chefs for daily preparation, opening, and closing procedures. Maintain proper portioning, quality, freshness, and consistency of all food items. Maintain a clean, organized, and sanitary workstation, kitchen, equipment, and utensils. Follow all food-safety, sanitation, and company standards. Work collaboratively with the culinary team to ensure efficient service and timely execution. Handle kitchen equipment safely and maintain a professional appearance and uniform. Qualifications 1+ year of sushi experience in a fast-paced, upscale restaurant required. Strong knowledge of sushi varieties, fish preparation, and rolling techniques. Knowledge of food preparation, sanitation, and restaurant service standards. Ability to multitask and perform effectively in a high-volume team environment. Strong attention to detail and passion for quality. Must be available to work nights, weekends, holidays, and extended hours as needed.
