Position Overview Sushi Bar Hermosa Beach is seeking a reliable, hardworking Dishwasher / Prep Cook to join our back-of-house team. This dual-function role is essential to daily kitchen operations, ensuring a clean, sanitary, and organized kitchen while supporting the culinary team with food preparation. Reports To Head Chef Key Responsibilities Dishwashing & Sanitation Wash, sanitize, and store all dishware, glassware, flatware, pots, pans, and kitchen utensils promptly and efficiently Operate and maintain commercial dishwashing equipment; alert management to any malfunctions Maintain a clean and organized dish pit, including sweeping and mopping floors as needed Empty trash and recycling regularly; manage kitchen waste disposal per health code Sanitize prep surfaces, cutting boards, and kitchen tools throughout service Ensure dishware and utensils are restocked and available for line cooks and FOH staff at all times Food Preparation Prep ingredients for sushi and kitchen stations, including washing, peeling, cutting, and portioning vegetables, proteins, and garnishes Assist with basic rice preparation, sauce prep, and other mise en place tasks under chef guidance Follow standardized recipes and portioning guidelines to maintain consistency Properly label, date, and store prepped items following FIFO (first in, first out) inventory practices Assist with receiving and storing deliveries, checking for quality and accuracy General Kitchen Support Maintain cleanliness and organization of walk-in coolers, freezers, and dry storage Support line cooks and sushi chefs during peak service as needed Follow all health department and food safety regulations Assist with opening and closing kitchen duties, including deep cleaning tasks Communicate proactively with kitchen leadership about low stock, equipment issues, or safety concerns Qualifications Prior experience as a dishwasher, prep cook, or in a similar kitchen support role preferred but not required Ability to work efficiently in a fast-paced, high-volume environment Basic knife skills and familiarity with kitchen equipment a plus Food Handler's Card (or ability to obtain one within 30 days of hire) required Strong attention to cleanliness, sanitation, and safety standards Ability to take direction well and work as part of a team Reliable, punctual, and able to work flexible hours including nights, weekends, and holidays Physical Requirements Ability to stand for extended periods (up to 8+ hours) Ability to lift and carry up to 50 lbs Comfortable working in a hot, humid, and fast-paced kitchen environment Frequent bending, reaching, and repetitive motion (washing, chopping, lifting) Ability to work around sharp objects, hot surfaces, and kitchen chemicals safely
