Along with the host team, this role provides guests' first impression and controls the flow of the dining room. The Lead Host courteously greets and escorts guests to tables, assists in seating, and ensures Zerbo's standards of hospitality are met at every step. This role helps prepare the restaurant for service and maintains the cleanliness and organization of the host stand and entry area throughout the shift. The Lead Host takes reservations and maintains the reservation system to maximize covers while meeting guests' expectations, assists with booking large parties and coordinating the details of private events, and monitors guest needs across all phases of service. This role also trains new hosts on the reservation and POS systems, sequence of service, and Zerbo's hospitality standards, and ensures all opening and closing duties are completed by the host team. Essential Duties and Skills Responsibilities and duties for this position include, but are not limited to, the following. At management's discretion, direction may be given for tasks outside the scope of work described. Essential Duties Maintain complete knowledge of, and comply with, all departmental policies, service procedures, and standards Ensure that hospitality standards are maintained at a superior level daily Maintain complete knowledge of scheduled daily activities, reservations, and any private events Maintain complete knowledge of hours of operation, ambiance, menu selections, and price range for both the market and bistro Maintain complete knowledge of all menu items, specials, 86'd items, and beverage selections available Maintain complete knowledge of, and strictly abide by, state alcohol regulations, particularly those prohibiting service to minors and intoxicated persons Maintain complete knowledge of table/seat/station numbers, proper table set-ups, room capacity, hours of operation, and dress code Assist with booking large parties and private events, coordinating menus and all related details Prepare the host stand and floor plan, assigning sections and stations following departmental procedures Set up the host stand with necessary supplies and always maintain its cleanliness; report shortages to a manager Inspect the condition and cleanliness of menus; ensure the appropriate quantity is available and update menus as changes occur Inspect the restaurant entrance and dining room, ensuring standards are met; correct any deficiencies and maintain cleanliness throughout service Inspect tables and stations to ensure set-ups meet departmental standards, checking throughout the meal period and following up with staff on any corrections Guide servers and support staff on table set-up needs to ensure optimum service to guests Answer the restaurant phone courteously and efficiently, per departmental standards Take, record, and confirm reservations and cancellations using the TableWatch reservation system Monitor and spot-check TableWatch reservations to ensure standards are being followed, and update online reservation details as needed Manage holiday and special-event reservations to ensure revenue opportunities are maximized Always maintain positive guest relations; anticipate guest needs and respond promptly Greet and acknowledge all arriving guests, however busy or whatever time of day Escort guests to tables, assist with seating, and present menus in accordance with departmental guidelines Accommodate all guest requests for information courteously Monitor and ensure that all aspects of service conform to departmental standards, notifying the appropriate staff of any issues Extend a courteous departure as guests leave the restaurant Ensure tables are cleared and reset according to standards Complete opening and closing duties as assigned Document pertinent information in the shift log Be familiar with the operation of the SpotOn POS system as well as manual back-up procedures Exhibit a friendly, helpful, and courteous manner with guests and fellow associates at all times Train and coach new hosts on TableWatch, SpotOn, sequence of service, and Zerbo's hospitality standards Perform other duties as required Skills Able to perform job functions with attention to detail, speed, and accuracy; prioritize, organize, and follow up A clear thinker who remains calm under pressure and resolves problems using good judgment Understands and anticipates guests' service needs Works cohesively with co-workers as part of a team, and independently with minimal supervision Maintains confidentiality of guest information Ability to stand and walk for prolonged periods of time Ability to multi-task in a fast-paced environment Strong organizational skills Exceptional guest relations skills Standard Responsibilities Strive to achieve departmental goals Ensure the cleanliness and organization of all work areas Communicate clearly and consistently with other departments, including the kitchen and market team Be knowledgeable about ongoing promotions, events, and menu changes, and be able to speak to them confidently Comply with and uphold all Zerbo's Market and Bistro policies Take on additional tasks as needed, within a reasonable scope Maintain good working relationships across all departments Serve as a brand ambassador, upholding Zerbo's standards of hospitality and presentation at all times Maintain a professional appearance in accordance with grooming and dress standards Comfortable working with a wide range of guests, including regulars, VIPs, and large parties Qualifications 1-2+ years of experience in a host, server, or front-of-house restaurant role;
