Job Summary We are seeking a dynamic and detail-oriented Production Manager to lead our manufacturing operations with energy and precision. In this pivotal role, you will oversee daily pemmican production activities, ensure safety standards are upheld, and drive continuous improvement in the pemmican kitchen. Duties Receiving & Inventory
- Receive inventory and catalog it properly into the FoodReady system
- Maintain inventory across FoodReady and external sources, including Excel and Google Sheets
- Run a full stock inventory every month. Production
- Carry out all production steps from start to finish with full adherence to SOPs
- Keep the kitchen clean, orderly, and ready for the next run. Food Safety
- Abide by our HACCP plan and its Critical Control Points ‚ holding time and temperature limits without exception
- Keep records honestly and completely. If it wasn't logged, it didn't happen
- Scale and manipulate recipes accurately for research and development
- Hold the standard protocol for all existing SKUs and offerings.
Required Skills / Experience Experience in fast-paced back-of-house restaurant environments ‚ and especially in prep kitchens, which is closest to how we work. Solid basic hygiene practice for kitchen spaces. Functional excellence in math, enough to manipulate recipes correctly, at scale, without a calculator crutch. Comfort with Excel and Google Sheets for real inventory work. Able to multitask across several production steps at once. Aware of where the dangers are in a kitchen, and able to work around them safely. Problem-solving instincts ‚ when something goes sideways mid-run, you work the problem.
This is hands-on production work:
standing for full shifts, lifting cases and totes, and working around hot equipment and cold storage. Helpful Skills / Experience Prior HACCP experience, or a food safety / ServSafe certification. Familiarity with FoodReady or a comparable food safety and inventory system. Meat processing, smokehouse, or rendering experience. A genuine interest in traditional foods and/or the outdoors.
